Okay I will be the first to admit that 'green tree' that is known in the world as broccoli is NOT my favourite vegetable, in fact I avoid it like the plague! I think you could even add chocolate to it and I still WOULD NOT eat it! Now that says a lot! ;)
Imagine if you can: me spooning this thermomix cheesy broccoli soup from the bowl, all the while muttering - I hate broccoli, why did I offer to make this, oh how do people eat this green thing, why why why why why do I have to eat this, I don't want to eat it, then imagine a 49 year old (yes I made this before my recent birthday) almost drop to the floor like a 2 yr old seeing his/her food mixed together or there being something else they wanted for dinner....
Begrudgingly I take the bowls to the table and have the rest of the family look at me stupid and with the what is wrong with you, why did you put broccoli in front of us?! ;)
Now let's stop that image there for a second, what I am about to share with you now is only my opinion, the other 10 Funkies I asked to test this recipe all definitely had a different verdict to me - they ALL LOVED it!.......... but I could only stomach 2 teaspoons, I just couldn't get past the fact that it's broccoli, I still can't get past the fact that it's broccoli!!!!!!!! Honestly who eats that stuff?!?!?!?! lol! :)
John (my son) who hates broccoli actually enjoyed it and ate two bowls full! So there is a positive from this whole experience, but no converting me... I shudder to think someone else will ask me to make a broccoli recipe........ (and to all the Funkies - NO!!! Do not get any naughty corner ideas!!!!) ;)
Maybe for all the parents that want to hide even more vegetables, following your manual blitz to make a hidden cheesy broccoli/vegetable soup. Maybe then I would have eaten more...lol.. ;)
Ingredients
- 200g tasty cheese, cubed
- 100g butter, cubed, divided (20g + 80g)
- 1 onion, peeled and halved
- 1 garlic clove, peeled
- 2 tablespoon plain flour mixed with ¼ cup water
- 20g TM vegetable stock concentrate
- 450g boiling water from kettle
- 200g milk
- 200g cream
- 300g broccoli florets
- 160g carrots, sliced into coins
- salt and pepper, to taste
- ½ teaspoon paprika sweet
- ½ teaspoon mustard powder
- pinch cayenne pepper
Instructions
- Place cheese into TM bowl and grate 10 sec / speed 9. Set aside.
- Place 20g butter, onion and garlic into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add remaining butter, flour, stock, boiling water, milk and cream and cook 8 mins / 90°C / speed 2.
- Add broccoli, carrots, salt, pepper, paprika, mustard powder and cayenne pepper and cook 15 mins / 90°C / speed 1 / Reverse.
- Add cheese and mix 1 min / 90°C / speed 1 / Reverse / MC off.

Yummy! Family enjoyed it. Ill just reduce or leave out the mustard next time. Personally I don't think it needs it. Lovely, warming soup.

I just made this soup for dinner tonight. It is so simple and so delicious.. I didn't add any salt and pepper to it, and didn't think it needed it. Perfect for a wet winter's evening. I think it would be quite nice with some chicken or bacon through it. Will try that next time. Thanks for a great recipe!

We try to enjoy 'Meat free Monday' so receiving this recipe was great timing! This is something I wouldn't normally make... But I had broccoli Which needed to be used up, so I thought 'Why not?'!
I cut the stalks and added them in the first batch of cooking and then (Using the instructions in the EDC) blitzed them before cooking the other ingredients for 15 minutes.
What a YUMMY soup. Very filling and even my Mum enjoyed the leftovers the next day for lunch (Aren't I a good daughter!?) LOL

Yum! I've made it twice, now. The first time I didn't have any cream and used extra milk instead and it was delicious. Today I came home from a job cold, wet and hungry and made it again as I wanted something to warm me up. Added a bit extra cayenne this time.. No complaints in my house!

Dear Leonie, I made this soup today, Friday, and it is very good. Easy and quick to make and the taste is ritch and creamy. I used appenzeller cheese, and that was not smart, because this cheese doesn't melt easely. Thank you for sharing this recipe with us. Kind regards, Anna

OMG ... Leonie this was scrumdidliumptious! How can anyone not enjoy broccoli, especially when combined with cheese. Very tasty and flavoursome as I said when I tested it for you. Have made it 3 times since then and we all enjoy it. ?
