Has Spring finally sprung at your place? It certainly feels like it's taking forever in the South Eastern part of the country! BUT I can't complain - much :D - I have a great selection of food to enjoy at the moment and this Thermomix Roasted Carrot & Turmeric Dip is definitely one of them!
With our move and moving so close to some good friends means I get to indulge more frequently in a good glass of wine .... oh and a good dip! With a pantry full of simple ingredients you will have this dip whipped up in no time and beating everyone else off with a stick to get your fair share! :)

Ingredients
- 300g carrot, chopped into chunks
- 2 garlic cloves, unpeeled
- 400g can chickpeas, drained
- 30g tahini
- 20g olive oil
- 15g vinegar
- 20g lemon juice
- 1½ teaspoon turmeric
- ¾ teaspoon salt
- ¾ teaspoon ginger, ground
- ¾ teaspoon onion, powder
- ¾ teaspoon rosemary, dried
- ½ teaspoon brown sugar
Instructions
- Preheat oven to 180°C.
- Place carrot and garlic into a baking tray, drizzle with oil and roast in a moderate oven 40 mins. Squeeze out garlic from cloves.
- Place all ingredients into TM bowl and chop 1 sec / Turbo.
- Scrape down and repeat until desired consistency.
- Place in refrigerator to chill prior to serving.
