I love cheesecake but when there are 1000 other thermomix inspired recipes I tend to just make my classic no bake lime cheesecake when the moment calls. So why a lemon cheesecake you ask? Well with many thanks to Diana (a ThermoFunky member) for sharing this delicious Lemon Cheesecake recipe she had been making for years. Of course I couldn't help myself and tweaked it a little more! :)
Now what makes this one a little more interesting is that the base isn't your normal crushed biscuits, it's dates & almonds. I'll admit I was a little skeptical but the tart taste from the lemon is beautifully balanced with the base. When served at a friends BBQ it was joked that I was going all "healthy" with the base and then all of a sudden it was so quiet! Yeah you guessed it they were all eating their humble pie! :)
Ingredients
Base
- 50g pitted dates
- 160g almonds
- 60g coconut
Filling
- 375g cream cheese, (room temp.)
- 400g condensed milk
- 120g lemon juice
- lemon zest, to sprinkle
Instructions
- Line a 23cm spring form tin or line 8 holes of a large muffin tin.
- Place dates, almonds and coconut into TM bowl and chop 20 sec / speed 8. Scrape down and chop a further 10 sec / speed 8.
- Press into base of tin or divide and press into 8 muffin holes.
- Place cream cheese into TM bowl and mix 10 sec / speed 8. Scrape down and repeat until smooth.
- Add condensed milk and lemon juice and mix 20 sec / speed 5. Scrape down and repeat until smooth.
- Pour mixture over prepared base and refrigerate approx. 3 hours or until set.
Notes
Zest lemons first, use to decorate cheesecake or freeze for later use.
For a more accurate measure, juice lemons into a small dish, then weigh and pour in TM bowl.
If making your own condensed milk do this before method 4.
