Alright, now listen up! This Thermomix lemon ripple cheesecake is absolutely DIVINE! The lemon curd through the cheesecake is just a beautiful little pop of flavour in the creaminess of the cheesecake. It will be the new family favourite and you will not be able to stop once you start! So make sure you have lots of family and friends around!
Ingredients
- 180g ThermoFun Lemon Curd (approx. ½ batch)
- 140g raw sugar
- 250g Butternut biscuits
- 140g butter cubed, room temp
- 1 lemon, zest, finely grated
- 3 teaspoon gelatine powder
- ¼ cup boiling water
- 2 egg whites
- 400g thickened cream
- 2 x 250g cream cheese, room temp
- 30g fresh lemon juice
Instructions
- Line a 23cm spring form tin
- Make ThermoFun Lemon Curd. Set aside.
- Place sugar into TM bowl and mill 3 sec / speed 9. Set aside for the filling.
- Place biscuits into TM bowl and chop 10 sec / speed 10.
- Add butter and zest and mix 10 sec / speed 8. Scrape down and repeat.
- Press into base of tin and place in fridge.
- Refrigerate 15 mins.
Filling
- Place gelatine and water into a small bowl, stir until dissolved and let soak approx. 5 mins.
- In a clean and dry TM bowl insert butterfly. Add egg whites and whip 3 mins / speed 3 / MC off. Set aside.
No need to wash TM bowl. - Insert butterfly. Pour cream into TM bowl and whip 30 sec / speed 4 (or until whipped). Set aside with whipped egg whites.
- Remove butterfly.
No need to wash TM bowl. - Place cream cheese, lemon juice, sugar and gelatine into TM bowl and mix 20 sec / speed 4. Scrape down and repeat.
- Add cream and egg whites and combine with aid of spatula. Mix 10 sec / speed 4. Then ensure all is combined with aid of spatula.
- Spoon half the cheesecake mixture on top of biscuit base.
- With aid of a teaspoon, dollop half the lemon curd in tiny amounts on top. Use a skewer to create a swirled effect. Repeat with remaining cheesecake mixture and lemon curd.
- Place cheesecake in fridge for 3-4 hours or overnight to set.

Oh. My. Gosh. Best cheesecake ever!! Used my own gluten free, sugar free raw crust, and subbed stevia for sugar in the entire recipe.
