Okay when you are running around doing all that Christmas shopping, attending school functions, after school break ups and end of year concerts, (geez I'm just tired writing that!) you will need quick dinners! This thermomix italian sausage & vegetables is the perfect meal.
Packed full of flavour and so versatile in that you can swap out the italian sausage for chorizo or even some shredded chicken if you need something super quick!

Ingredients
- 1 tablespoon ThermoFun Cajun seasoning
- 1 onion, peeled and halved
- 4 garlic cloves, peeled
- 2 Italian sausages, sliced
- 100g carrot, diced
- 100g celery, diced
- 100g zucchini, diced
- 1 small capsicum, diced
- 4 tomatoes, diced
- 200g mushrooms, finely sliced
- 120g red wine
- salt and pepper, to taste
- To serve: with pasta or zoodles
Instructions
- Make Cajun Spice and set aside.
- Click Here to cook pasta (if using) in ThermoServer. While your pasta is cooking, continue on to make your sauce.
- Place garlic and onion into TM bowl and chop 3 sec / speed 5.
- Add sausages and cook 5 mins / Varoma / speed 1 / Reverse / MC off.
- Add 1 tablespoon Cajun seasoning, carrot, celery, zucchini, capsicum, tomatoes, mushrooms, wine, salt and pepper and cook 10 mins / 100°C / speed 1 / Reverse.
- Cook a further 7 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
- Add vegetables and sausages to pasta/zoodles and stir to combine.
