The run down for Christmas is fast approaching and I am thinking simple this year! So if you want simple delicious food then this thermomix prosciutto, zucchini and pearl couscous salad will be on the "to cook list".

Ingredients
- 2 garlic cloves, peeled
- 20g olive oil
- 100g prosciutto, quartered
- 600g boiling water from kettle
- 250g pearl (Israeli) couscous
- 140g peas, frozen
- large handful fresh basil, coarsely torn
- handful fresh mint, coarsely torn
- 250g cherry bocconcini, halved
- 350g zucchini, diced
Mustard Lemon Dressing
- 1 teaspoon ThermoFun Italian Blend
- 1 teaspoon mustard, powder
- 20g olive oil
- 1 teaspoon honey
- 2 tablespoon lemon juice
- salt and pepper, to taste
Instructions
- Place garlic, oil and prosciutto into TM bowl and chop 3 sec / speed 5.
- Scrape down and cook 5 mins / Varoma / speed 1 / Reverse / MC off. Set aside into a large salad bowl.
No need to wash TM bowl. - Pour boiling water and couscous into TM bowl and cook 8 mins / 90°C / speed 1 / Reverse.
- While couscous is cooking make Italian Blend and set aside.
- When couscous is cooked (texture is typically al dente) add peas and stir through. Allow to stand for one minute for peas to defrost.
- Pour couscous into simmering basket and run the couscous under cold water to cool it quickly. Allow to drain well.
- Transfer couscous to the salad bowl. Add basil, mint, bocconcini and zucchini.
- Place into a separate bowl, 1 teaspoon Italian herb blend, mustard powder, oil, honey, lemon juice, salt and pepper and mix.
- Pour dressing into salad bowl and mix well.

Absolutely loved this salad....we had it first night as a meal and the next night to accompany a steak. My 16yr old son who is not a salad eater even asked for some for his lunchbox. Look forward to making it again. Thanks!
