    Chorizo Corn and Barley Soup - Week 30, 2017

    For all the fellow chorizo lovers :D Here is another great recipe!  Perhaps I should do a mini Chorizo Cookbook! :D

    This thermomix chorizo corn barley soup is so delicious and given how cool it can get in winter, I know this will be a crowd favourite!

    This one is a WOW the family or guests kinda dish as well.  You could also use it as a starter to a Mexican fiesta.

    thermomix-Chorizo-Corn-And-Barley-Soup

    Ingredients

    • 2 teaspoon ThermoFun Cajun Spice Mix
    • 4 garlic cloves, peeled
    • 2cm fresh ginger
    • 1 onion, peeled and halved
    • 2 chorizo, sliced
    • 20g TM vegetable stock concentrate
    • 700g boiling water from kettle
    • 400g tomatoes, diced
    • ¾ cup pearl barley, rinsed
    • 2 fresh oregano sprigs, or ½ teaspoon dried
    • 1 small red capsicum, diced
    • 400g tin corn kernels, drained

    To garnish

    • sour cream
    • 1 green chilli (optional), sliced
    • fresh coriander, leaves

    Instructions

    1. Make Cajun spice mix and set aside.
    2. Place garlic, ginger and onion into TM bowl and chop 3 sec / speed 5. Scrape down.
    3. Add chorizo and sauté 5 mins / Varoma / speed 1 / MC off.
    4. Add stock, tomatoes, barley, 2 teaspoon Cajun spice and oregano and cook 20 mins / 100°C / speed 1 / Reverse.
    5. Add corn and capsicum and cook 15 mins / 100°C / speed 1 / Reverse.
    6. Serve with sour cream, sliced chillies and coriander.

      Yummy filing soup. The chorizo does give that little spice that is not overwhelming for me as I don't like spicy food, it's just the perfect amount. Will include it on my regulars.
