This is a perfect soup for a cold night. I love how it is so tasty and yet so quick to whip up. This recipe was inspired by a recipe in a Coles supermarket magazine which I converted to be made in the Thermomix.
Ingredients
- 400ml coconut milk
- 1 batch ThermoFun Laksa Paste
- 20g TM vegetable stock concentrate
- 380g boiling water from kettle
- 400g can sweet corn kernels
- 400g can creamed corn
Garnish
- 2 tomatoes, diced by hand
- 3 spring onions, finely sliced by hand
- 1 tablespoon fresh coriander, roughly chopped
Instructions
- Make coconut milk and set aside.
No need to wash TM bowl. - Make ThermoFun Laksa paste and cook 2 mins / 100°C / speed 1.
- Add coconut milk, stock and boiling water and cook 5 mins / Varoma /
speed 1. - Add sweet corn and creamed corn and continue to cook 5 mins / Varoma / speed 1 / Reverse.
- To serve, ladle soup into bowls and top with diced tomato, spring onions and chopped coriander.
Notes
If you make multiple batches of the laksa paste to store in the freezer, this
recipe is on the table in less than 20 minutes.
