Every now and again throwing something in the Thermomix and then in the oven is just about all I can accomplish for the day! Yes even I have days where the Thermomix just feels like too much effort. This Thermomix chicken and chorizo cajun quiche was born from one of those days! A little bit of leftover shredded chicken, some chorizo that needed to be used, and eggs that were going to go to waste.
Looking at the bowl I decided I was going to get adventurous and throw in some cajun spice mix. And the end result was delicious!

PS: those that are low carb this one is for you!
Ingredients
- 100g Swiss cheese, cubed (or any cheese you prefer)
- 3 garlic cloves, peeled
- 1 large onion, peeled and halved
- 1 tablespoon ThermoFun Cajun Spice Mix
- 2 chorizo, sliced thinly and slices halved
- 6 eggs
- 200g thickened cream
- pepper, to taste
- 250g cooked chicken, shredded
Instructions
- Preheat oven to 180°C. Grease a quiche dish.
- Place cheese into TM bowl and grate 8 sec / speed 10. Set aside.
- Place onion and garlic into TM bowl and chop 3 sec / speed 5. Scrape down.
- Add chorizo and spice mix and sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
- Pour into quiche dish.
- Add eggs, cheese, cream and pepper and mix 15 sec / speed 2.
- Add shredded chicken and mix through with spatula.
- Pour into quiche dish and bake for 40 mins.
- Remove from oven and allow quiche to rest for 5 mins before cutting.
- Serve with salad or roast vegetables.
