Australia Day is approaching and if you have been nominated as the dessert bringer then this Thermomix Baileys Tiramisu will be the winner for the day! The first recipe of the new year and it's going to have you licking your lips and possibly the plate!
Imagine yourself sitting in a cafe on the canals, sipping on coffee and enjoying a guilt free dessert! A mix of flavours that gives the classic a new lease on life. It'll leave everyone asking for one more serve.
Ingredients
- 90g strong espresso coffee, cooled (3 shots)
- 100g sugar
- 2 eggs
- 500g mascarpone cheese
- 1 teaspoon ThermoFun Vanilla Bean Paste
- 100g ThermoFun Baileys Irish Cream, divided
- 1 pkt savoiardi biscuits (Italian lady finger biscuits)
- 2-3 teaspoon cacao powder or grated chocolate
Instructions
- Combine the cooled coffee and 50g Baileys Irish Cream in a separate bowl. Have ready a rectangular dish (approx. 18x22x5cm) for assembly.
- Place sugar into TM bowl and mill 3 sec / speed 9.
- Insert butterfly. Add eggs and whip 4 mins / speed 4. Remove butterfly.
- Add mascarpone cheese, vanilla and 50g Baileys Irish Cream and mix 20 sec / speed 4. Scrape down and repeat.
- Dip each biscuit into the coffee and Baileys mixture, only for 2 seconds.
NB: You don’t want them at this stage of being too soggy and falling apart. - Place biscuits in the base of the dish in a single layer. Once the base is filled, use half the mascarpone cheese mixture and carefully spread a layer over the biscuits.
- Place another layer of soaked biscuits on top of the mascarpone cheese layer, finishing off with the remaining mascarpone cheese. Smooth over the top, cover and refrigerate min 6 hours or preferably over night to set.
- When ready to serve, dust a generous layer of cacao powder all over the top.
Notes
Keep refrigerated until serving time.

Hi is there any replacement for eggs in this recipe

Hi Vinod, the egg is necessary as it's a setting agent, plus makes it light and fluffy and makes the marscapone almost custard like. However, you could try using aqua faba instead of egg - whip up 1 can worth of aqua faba and then fold into the mascarpone, sugar, baileys and vanilla mix.
