    Campari & Orange Cocktail - ThermoFunkies February 2018

    This is summer!  Lip smacking deliciousness is this thermomix campari orange cocktail!  Serves 2 so if you are hosting make sure you have enough on hand :D

    For those not familiar with the Italian aperitif Campari, it has a slightly sweet but bitter flavour and is a lovely ruby red colour.  It is perfect for summer drinking as a thirst quencher and teams beautifully with orange and some bubbles from the sparkling mineral water.  This may not be a substantial Thermomix recipe, but the crushed ice made in a flash will get the cold drinks out to the party even faster!  This would be something a little different to serve at your next party, a bbq, by the pool or even a summer brunch or luncheon.  Hope you enjoy it!

    If you aren't a campari fan or not sure if you would need to purchase a bottle - try a good quality gin :D

    thermomix-Campari-And-Orange

    Ingredients

    • 200g ice cubes
    • 60g Campari
    • 200g orange juice (pulp free)
    • ¼ orange, thin slices
    • 200ml sparkling mineral water

    Instructions

    1. Place ice cubes into TM bowl and crush 4 sec / speed 8.
    2. Divide crushed ice between 2 glasses and place orange slices into each glass.
    3. Pour Campari and orange juice into TM bowl and mix 5 sec / speed 5.
    4. Pour the Campari and orange on top of the crushed ice, dividing between the two glasses.
    5. Top up the glasses with sparkling mineral water and serve.

    Notes

    NB: Campari can be substituted with gin

      This is amazing! My (Italian) husband used to tell me Campari was an old ladies' drink as so many of his Aunties would drink it mixed with soda water, now you have offered a modern, delicious twist and I, for one will definitely enjoy a tipple 8)
