    Apricot Honey Bars - ThermoFunkies February 2018

    These delicious thermomix Apricot Honey Bars are crispy and perfect for your lunchbox or a treat for anytime. If you like 'honey joys', you’ll love these. This recipe uses dried apricot but feel free to use any chopped dried fruit you have at hand.  I do find they are best stored in the fridge or somewhere cool.

    Please note this does contain peanut butter - so may not be appropriate for some schools.  I have not tested these with other nut butters or butters that might be acceptable with allergy restrictions.  If you try this recipe using an alternative please let us know in the comments so that we can offer suggestions in the recipe.

    Apricot Honey Bars – ThermoFunkies Recipe

    thermomix-Apricot-And-Honey-Bar

    Ingredients

    • 125g dried apricots
    • 4 weet-bix, crushed
    • 1 cup rice bubbles
    • 1 cup rolled oats
    • ½ cup coconut
    • 90g raw sugar
    • 150g honey
    • 150g peanut butter
    • 125g butter, cubed

    Instructions

    1. Grease and line a slice tin.
    2. Place apricots into TM bowl and chop 5 sec / speed 7.
    3. Place chopped apricots into a large bowl. Add weet-bix, rice bubbles, oats and coconut and stir to combine.
    4. Place sugar, honey, peanut butter and butter into TM bowl and melt 2 mins / 50°C / speed 2. Scrape down and repeat.
    5. Pour honey mixture over the dry ingredients and mix well.
    6. Press into tin and place into refrigerator to set.

    Notes

    Keep stored in refrigerator.

      my first cook along success these are so easy and delicious .They even divided up perfect.
      I even used them to bribe my kids to clean their room lol
      Next batch is on its way which I might add a drizzle of white chocolate mmm
