Tess, one of our lovely funkies shared this recipe that her Mum's friend made her and had seen it in a magazine. Tess asked if I could convert it for the thermomix. Well it was an absolute pleasure to do this! The bonus was that these Thermomix macadamia anzac biscuits are AMAZINGLY delicious!!!!!
These biscuits will become a very strong family favourite! So I would suggest making sure you do a double batch and put some in the freezer! Imagine a subway macadamia cookie and an Anzac biscuit getting married and having babies... lol... enjoy!

Ingredients
- 50g macadamia nuts, whole
- 60g dried apricots
- 130g butter, cubed
- 30g golden syrup
- 30g honey
- 100g brown sugar
- ½ teaspoon bi-carb soda
- 1 tablespoon boiling water from kettle
- 150g plain flour
- 80g oats
- 40g coconut, desiccated
- 1 tablespoon white chia seeds
Instructions
- Preheat oven to 160°C fan forced. Line 2 trays with baking paper.
- Place apricots into TM bowl and chop 2 sec / speed 5.
- Add nuts and chop 2 sec / speed 5. Set aside.
- Place butter, golden syrup, honey and sugar into TM bowl and melt 3 mins / 50°C / speed 1. Scrape down and continue 1 min / 50°C / speed 1.
- In a separate small bowl, combine bi-carb soda and boiling water, stirring until dissolved. Add to TM bowl and mix 5 sec / speed 2.
- Add flour, oats, coconut, chia seeds, nuts and apricots and mix 20 sec / speed 3 / Reverse.
- Roll dough into golf ball sized balls and place onto baking trays leaving enough room between each for spreading. Gently press each ball down with a fork.
- Bake 13-15 mins or until golden but soft. Allow to cool on a wire rack.
- Keep in an airtight container.
