I'm back! For another instalment of the "let's enjoy dips all day every day"! Here is a great Thermomix Asian coriander and parsley dip. Now for my coriander hating friends - there is really no escaping this one - you can't sub for parsley as it's already got parsley! So just give it a go. I will convert you sooner or later!
In all seriousness though, this dip is amazing and will be great if you are entertaining this Easter.
Pair this dip with any of these crackers for a delicious flavour explosion!
Whatever cracker you choose - you will have to fight everyone off for the last little bit - so I suggest having double the ingredients on hand for whenever the fights start to break out! ;)

Ingredients
- generous handful fresh coriander
- generous handful fresh parsley
- 100g cashews, roasted (or peanuts)
- 60g sun-dried tomatoes
- 30g olive oil
- 1 red chilli
- 30g lime juice
- 10g sesame seeds
- 1½ teaspoon ThermoFun Thai Spice Blend
- pinch of salt
Instructions
- Place all ingredients into TM bowl and chop 1 sec / Turbo.
- Scrape down and repeat to desired consistency.
- Serve with flat bread or crackers.
