There comes a time when Jatz, Clicks, and all the other crackers in the shops just don't cut it anymore! Enter the thermomix crisp seed crackers. :) Being grain free and can be made dairy free, you can enjoy these very more-ish crackers with the abundance of ThermoFun Dips.
You could crack these crisps for dips, leave them larger for cracker bread or you can blitz them a little and you have a crunchy topping for a salad! :)
Ingredients
- 40g parmesan cheese, cubed
- 200g sunflower seeds
- 100g sesame seeds
- 60g linseeds (also called flaxseed)
- 30g psyllium husks
- 1 teaspoon salt flakes
- 500g water
Instructions
- Preheat oven to 160°C and line two baking trays with baking paper.
- Place parmesan in TM bowl and grate 10 sec / speed 9.
- Add remaining ingredients and combine 10 sec / speed 3.
- Allow mixture to rest in bowl for 10 mins to allow the psyllium husk to swell and thicken.
- Divide the mixture between the two trays and push it into a rectangular shape with your spatula. Place a piece of baking paper on top of the mixture and use your MC or a rolling pin to push it out into 3-4mm even thickness. Carefully take the top sheet of paper off.
- Bake both trays at same time for 75 mins in total.
NB: after the first 50 mins, carefully turn the cracker over and rotate the trays from top to bottom. Continue baking another 25 mins. - Once the trays are out of the oven, use the blunt side of a knife to cut horizontal and vertical lines through to make square crackers, OR just break into shards. Allow the crackers to cool on trays and then store in an airtight container.

Made myself a batch of these crackers on the weekend, and I have to say they are the tastiest seed crackers I've made yet! I reduced the sesame seeds by 20g and replaced with 20g golden linseed/flaxseeds instead as I've found too many sesame seeds can make the crackers very bitter. I also used a mixture of both brown and golden linseed. Absolutely delicious served with peanut butter or cream cheese :-) thanks Leonie

I cannot believe how tasty these crackers were. Also, I really thought that rolling them out would be fiddly and fussy, but not at all. These will be made on a regular basis in this house! Will never again buy crackers! Thanks!!
