Italy - who doesn't want to just be sitting on the canals drinking coffee and or eating some amazing food! Our trip to Italy was amazing and I often look back at the little house that we stayed in with such fond memories! Anyway - this thermomix creamy tuscan garlic chicken is just divine.
It's so packed full of flavour and one of the great simple dishes to make!
Cook your pasta in the thermoserver while your creamy tuscan chicken is cooking and voila - dinner on the table!
Another great one with this dish - make the creamy tuscan chicken and pop it in the freezer and it's another great quick meal when you are rushing about or just don't want to "cook".
If you are wanting to make this low carb just minus the pasta and cornflour (or factor into your macros) if you are wanting to make with less calories use a light cream and eat more of the chicken and sauce rather than the pasta :D
It is also delicious using my cajun spice mix instead of the Italian herbs.

Ingredients
- 300g penne
- 50g parmesan cheese, cubed
- 3 garlic cloves, peeled
- 100g sun dried tomatoes
- 1 tablespoon ThermoFun Italian Herb Blend
- 1 tablespoon cornflour mixed with a small amount of water
- 700g chicken thighs, cubed
- 200g cream
- 120g chicken liquid stock (or 20g TM vegetable stock concentrate + 100g water)
- 60g baby spinach
Instructions
- Cook pasta in ThermoServer.
- While your pasta is cooking, continue on to cook your chicken and sauce.
- Place parmesan into TM bowl and grate 10 sec / speed 9. Set aside.
- Place garlic and sun dried tomatoes into TM bowl and chop 3 sec / speed 5.
- Add Italian Herb Blend, cornflour paste, chicken, cream and stock and cook 17 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
- Drain pasta and return to ThermoServer. Add baby spinach and parmesan and stir through with aid of spatula.
- Combine chicken with pasta & serve.

That was delicious! I had some mushrooms to use up so I reduced the chicken 200g and added 200g mushrooms, roughly sliced. It went really well I think :)

I have made this a couple of times now and hubby just loves it! I sub yogurt for the cream and we prefer chicken breast to thigh. I find the chicken is less likely to shred if I add a bit more yogurt/cream and use speed soft instead of sp 1. Thanks for the great recipe Leonie.
