    ThermoFun - Red Curry Prawn Risotto Recipe

    Curries and seafood are a favourite in our house!  So a recipe to combine the two is perfect for us.  If you are not a fan of prawns - just add cubed chicken in step 5 with the rice.

    ThermoFun – Red Curry Prawn Risotto Recipe

    Ingredients

    • 1 onion, peeled and halved
    • 2 spring onions, quartered
    • 2 garlic cloves, peeled
    • 1 red chilli, deseeded
    • handful coriander leaves
    • handful parsley leaves
    • 1 tablespoon red curry paste
    • 20g olive oil
    • 100g carrot, quartered
    • 1 red capsicum, quartered
    • 400g coconut milk
    • 400g boiling water from kettle
    • 20gTM vegetable stock concentrate
    • 300g arborio rice
    • pepper, to taste
    • 400g - 500g raw peeled prawns

    Instructions

    1. Place onion, spring onions, garlic, chilli, coriander, parsley and oil into TM bowl and chop 5 sec / speed 5. Scrape down.
    2. Add curry paste and sauté 5 mins / Varoma / speed 1 / MC off.
    3. Add capsicum and carrot and chop 3 sec / speed 8.
    4. Scrape down and add 100g coconut milk (reserve rest in the can).
    5. Cook 2 mins / 100°C / speed 1 / Reverse.
    6. Add remaining coconut milk, arborio rice, water, stock and pepper and mix
      2 sec / speed 3 / Reverse.
    7. Continue cooking 16 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
    8. Add prawns and with aid of spatula, stir gently to mix.
    9. Cook 4 mins / 100°C / speed 1 / Reverse.
    10. Place in ThermoServer and allow to rest 5 mins.

    Notes

    Don't be tempted to add the prawns earlier. They continue cooking in the Thermoserver. Adding earlier will overcook them.
    If you prefer to use chicken this can be added at step 5.

      Could I use 400ml prawn stock instead of the stock paste and boiling water? I assume the stock would have to be hot first

        Yes absolutely you can Jacki. You can add the stock cold but just allow an additional few minutes for it to warm up in the TM.

      Loved this dish used a combination of Chicken and Prawns also added some peas in at the end with the prawns . Really tasty another winner ids were happy

      I have a Green Curry mix in the freezer from a separate recipe, do you think that could be used instead of the Red Curry Paste?

      Very nice and a bit different to the usual risotto. I made it with chicken & zucchini instead of capsicum - it is quite forgiving with the vegies you can use :)

        Hi Kristin, it keeps well in the fridge for up to 3 days. And yes it can be frozen too. :)

      This is one of our favourites. When my man says you can make that again it has to be good. One of the regulars that we make. It makes 6 good sized serves, so 3 meals for the 2 of us and a few lunches of leftovers the next day for me. I think I need to add more prawns though. I have added snow peas in at the same time as the prawns, but the bowl gets a bit on the full side. Maybe it would work better with extra in the TM5.

      My 1st time cooking risotto in my thermie.

      Risotto was Devine, I used chicken & added it in Step 5.

      I used Simon Johnson green curry paste.

      This is the best thing I have made in my Thermomix so far. Absolutely delicious and so easy. Followed the instructions as stated and wow, so yum. I used prawns, but will also try chicken another time. Plus it goes such a long way. Thanks again

        Danielle if you aren't keen on 'heat' leave out the chilli, then it would be absolutely fine for those that don't like it hot. :)

      I made this with 600grams of prawns and the ratio was perfect. I served Brocollini on the side. It Fed 4 adults.

      I made this last night, I used skinnymixers laksa paste as I had no red curry paste. It was amazing! Best thing is that it didn't go gluggy and 'set', even though I had it sitting in a server for 25 minutes. Thank you!

        KA - chicken needs a lot more cooking time. So add the chicken at step 6. :)

      My absolute favourite risotto ever. I have made it with both prawns and chicken, both equally delicious. In fact I chose to make it for our wedding anniversary rather than go out for dinner. That way we knew we wouldn't be disappointed in the meal. Thanks Leonie

      This is one of the best recipes for a Thermo-cooker ever! I just made it again tonight. I've lost count of how many times I've made it ... just for me. My OH doesn't like prawns (what's wrong with him?!) so when he goes away overnight, I make it for myself!

      Hi - is 'TM vege stock' the vegetable stock paste from the Basic Cookbook? Do you use a tablespoon of paste or stock (made from the paste) ie: 1 tablespoon of liquid? Can you use stock made from a shop bought stock cube instead? Still only use 1 tablespoon of stock/liquid? Thanks!

        Hi Melinda, yes it is 1 Tbsp concentrated stock which is from the BCB. If you are using a shop bought stock cube I'd suggest you use one whole stock cube. :)

      One question: the ingredients list says 400ml water, but cooking mwthod says 300ml water. Which is correct?

        wow Michelle you are obviously very observant! :) Sooo many people have made this and also heaps from my recipe on the TM Recipe Community, that no one has asked this question!! lol I have to admit to say I'm guessing but I would go with the 400g in the ingredients. It is now on my list of things to cook to double check it! Thank you for bringing it to my attention! :)

        Hi Bev - general rule of Thermomix recipes is if they are halved we take off 20% cooking time. If doubled we add 20% cooking time. However with this particular recipe I would say the alborio rice would still need the same amount of time as stated in the recipe. I hope you enjoy it! :)

        Yes Belinda that should be fine. I'd just add them no more than a minute before the end - just long enough to heat them through which would not take long. In fact you could even just stir them through the risotto when you put the risotto in your thermoserver - and leave the risotto to 'sit' for a few mins.
