
You're rushing in the door at the end of the day and for one reason or another what you had planned for dinner is just not going to happen! Print this one and stick it to the cupboard because this will be your 'go to' thermomix family dinner! With common pantry products this can be whipped up within minutes! Giving you enough time to get the masses sorted or just have 10 to wind down for yourself. :)
Ingredients
- 45g pine nuts
- 50g parmesan cheese, cubed
- 250g fettuccine
- 2 garlic cloves, peeled
- 1 tablespoon capers, drained
- 1 red chilli, deseeded
- handful fresh parsley, divided
- 1 onion, peeled and halved
- 70g olive oil
- 1 lemon, juice only
- 425g can tuna, drained
- salt and pepper, to taste
Instructions
- Place pine nuts into TM bowl and dry roast 8 mins / 100°C / speed 1 / Reverse / MC off. Set aside.
- Place parmesan into TM bowl and grate 10 sec / speed 9. Set aside
- Cook fettuccine in TM bowl as per instructions in EDC/BCB and set aside in pre-warmed ThermoServer.
- Place garlic, capers, chilli and parsley (set aside a little for garnish) into TM bowl and chop 3 sec / speed 8.
- Add onion and oil and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add lemon juice, tuna, salt and pepper and cook 2 mins / 100°C / speed 1 / Reverse.
- Toss tuna mix and fettuccine together well.
- To serve, garnish with parsley, pine nuts and parmesan.
