    Fettuccine Alfredo - Week 48, 2014

    A perfect quick vegetarian meal. Serve with a lovely fresh crisp salad or just on its own.

    ThermoFun – Week 48 – Fettuccini Alfredo Recipe

    Ingredients

    • 80g parmesan cheese, cubed
    • 375g fettuccine
    • 4 spring onions, quartered
    • 3 garlic cloves, peeled
    • 20g olive oil
    • 40g white wine
    • 300g cream
    • 1 tablespoon Dijon mustard
    • handful chopped fresh parsley
    • salt and pepper, to taste

    Instructions

    1. Place parmesan cheese into TM bowl and grate 10 sec / speed 8. Set aside.
    2. Cook pasta in TM bowl as per EDC/BCB instructions and set aside in ThermoServer.
    3. Add spring onions, garlic and oil and chop 3 sec / speed 8.
    4. Scrape down and sauté 3 mins / Varoma / speed 1 / MC off.
    5. Add wine, cream, mustard, parsley, cheese, salt and pepper and heat through 3 mins / Varoma / speed 1.
    6. Pour onto pasta in ThermoServer and toss gently to combine.

      Made this favourite again to go with chicken schnitzel. I added some bacon, baby spinach leaves and a zucchini to add some colour and flavour. Tasted good - 20 year old wasn't sure about the green colour!!! He said "You chopped up veggies Mum".

      Made this for a quick & easy dinner after work, I added some bacon though as my boys wanted some meat lol! So quick & easy we loved it even had my baby asking for more oh btw his 14 so not really a baby ?

      G'day! I was SOOOOOOOOOOOOOOOOOOOOOO hungry and looked for something quick to eat!
      I had this on the table, licking the plate lol in less than 15 minutes!
      I used finely chopped fresh spinach instead of parsley, 2 heaps tablespoons of dijon mustard and oops...the wine wouldn't stop, so ended up 5 extra grams and used 250 grams of cooking cream!

      Made this for a quick easy dinner. A family favourite now converted to a thermomix meal. Another winner thanks Leonie. My boys loved it. The glass of sparkling went beautifully with this!
