    ThermoFun - Cooking Fettuccine - Techie Tuesday

    Our family eat a lot of pasta and on my ThermoFun Facebook page, whenever I have posted about cooking spaghetti or fettuccine in the TM bowl many comment saying that their pasta turns into 'sludge'.

    I cook with the Every Day Cookbook (EDC) recipe with these modifications:

    • the water is straight from the kettle boiled - to save time
    • follow the pasta packet cooking time - check at the 8-10 minute mark if you feel the need.

    These could be some of the reasons why a few have a problem with cooking pasta in the TM.

    • the water is not hot enough
    • the Reverse button was not activated
    • although I have not had this problem because I haven't cooked Gluten Free pasta some find it a bit 'sludgy' - I am looking into this.
    • not using enough water
    • cooking it for too long / leaving it in the TM bowl once it has finished cooking for an extra few minutes while preparing something else.

    Follow the EDC method with my modifications using the recipe below:

    Check out this video first of cooking fettuccine in the Thermomix.  The video is only 7 seconds where I show you full length fettuccine, being slowly drawn into the TM bowl without the need of breaking  it in half first.  You may need to help the pasta move down into the bowl by tapping gently on the top of the pasta.

    ThermoFun – Techie Tuesday – Fettuccine Carbonara

    Ingredients

    • 40g parmesan cheese, cubed
    • handful fresh parsley or mint
    • 1-2 garlic cloves, peeled
    • 10g olive oil
    • 12 short cut bacon rashers or pancetta, roughly chopped
    • 2 spring onions, sliced
    • 1200g boiling water from kettle
    • 400g fettuccine
    • 100g peas frozen (optional)
    • 150g cream
    • 1 egg

    Instructions

    1. Place cheese and parsley into TM bowl and chop 10 sec / speed 9. Set aside.
    2. Place garlic into TM bowl and grate 3 sec / speed 8.
    3. Add oil, bacon and spring onions and sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
    4. Pour bacon mixture into ThermoServer to keep warm.
      No need to wash TM bowl.
    5. Pour boiling water into TM bowl and place TM lid on. Through hole in TM lid, add fettuccine and cook 13 mins / 100°C / speed soft / Reverse.
    6. Add peas into TM bowl and cook 1 min / 100°C / speed soft / Reverse.
    7. Drain pasta and peas and add to pre-warmed ThermoServer. Add cream and raw egg (see note) to pasta and with aid of spatula stir through to combine.
    8. Add cheese and parsley and stir through.

    Notes

    It is important to add the egg and cream to the pasta while it is still very hot. The residual heat of the pasta will cook the egg enough to give you a silky smooth sauce.

        Hi Denese and welcome to ThermoFun! :) Speed soft is the symbol with the spoon before speed 1. MC is an abbreviation for measuring cup so leave it off. If a recipe does not mention the MC always have it on.

      Another delicious dinner with my youngest wanting seconds I use tri colour fettuccine so I didn't stick it through the whole as its a lot thicker. N I used Pancetta for something different. So easy.

      I made this for dinner tonight and I was impressed! I've had my Thermie for a year, and I've never cooked pasta in it, but given how easy it was, this won't be the last time! I used penne (my children love it) and it came out well, although I cooked it two minutes longer than the pack instructions (I used the Barilla penne). Otherwise, I followed your recipe to the letter :). A great flavoursome dinner, Thank You!

      not sure what I've done wrong but my bacon (and I added mushrooms) ended up completely macerated! I definitely had thermie set on reverse. Does anyone know what I've done wrong?! Otherwise a great recipie!

        I know this is an old comment but I keep the bacon n mushroom really big pieces yes it disintegrates in the tm.

      we love the fettuccine in the RDC and think this one would be a good one to try. However I query the amount of bacon. Is 12 rashes correct. Unfortunately I am still leaning and have been caught a couple of times with ingredients too,large for the bowl.

        Hi Yvonne - gosh you are the first one to pick that up! Yes it does sound excessive! I wonder what I was thinking!! lol!! ;)
        I only buy the small short cut bacon and I trim all the fat. It really is up to you though how much you put in, depending on how much you like bacon I guess! :)

      Big hit in our family. I put a tbsp of TM vegie stock in with the pasta water to season the pasta while cooking. Delicious flavours.

      My family very much enjoyed this meal. I have never thought to cook such different varieties of meals in a short amount time. Preparation is nothing just follow the instructions and "Theo" will do the rest. We will be having this dish again. Thank you for sharing.

      I haven't yet tried long pasta in my thermie so I'm keen to try this. My husband and I are both following low carb diets and we miss our pasta, so maybe a valentines treat! I love making my own pasta but I'm sure it wouldn't hold up in the thermie. Do you ever make your own Leonie?
