    ThermoFun - Rocket, Cashew & Parmesan Chunky Dip Recipe

    Thermofun Rocket dip

    With the festive season happening we have been to so many BBQ's that I was spending more and more time in the dip aisle of the local supermarket wondering what dip to take this time.  So I'm standing there thinking to myself - I have all these ingredients at home why can't I just make it in the Thermomix?!

    It felt like an epiphany and I was in dreamland of all the dips I love, at the thought of them being made at home within minutes! So I bought my very last dip that day - well I didn't have enough time to make something as we were already running late!

    ThermoFun – Rocket, Cashew & Parmesan Chunky Dip Recipe

    Ingredients

    • 2 garlic cloves, peeled
    • 65g parmesan cheese, cubed.
    • 120g cashews, unsalted
    • 60g rocket
    • 10g basil fresh
    • 30g white vinegar
    • 50g olive oil
    • 1 red chilli, deseeded
    • juice of half lemon
    • ThermoFun Thai Spice Blend, generous sprinkle

    Instructions

    1. Place all ingredients into TM bowl and chop 1 sec / Turbo.
    2. Scrape down and repeat.
    3. Enjoy dip with crackers!

    Notes

    I have also added Kale to it - combination of basil, rocket, and kale I did successfully up to 100g in total. If mix is too dry just add more oil.

      What can I say??? PERFECTO! Quick and Easy and every so tasty....so much so, that I had to make myself stop eating the whole lot. I have not been one to eat a lot of dips, but this has changed my mind. Next time I will try the Basil, Cashews and Parmesan Dip, just to try something different.

      I've made this one a few times, everybody liked it. Always ask recipe from me. One of my Indian friend had recipe then send to her mother in India.
