    Thermofun basil dip

    A light refreshing chunky thermomix dip for when people drop around unexpectedly or just perfect to go with the afternoon glass of wine and catch up with family!

    ThermoFun – Basil, Cashew & Parmesan Dip

    Ingredients

    • 30g fresh basil
    • 120g cashews, unsalted
    • 1 garlic clove, peeled
    • 60g parmesan cheese, cubed
    • 50g olive oil
    • 20g white vinegar
    • sprinkle of thyme & oregano (optional)

    Instructions

    1. Place all ingredients into TM bowl and chop 1 sec / Turbo.
    2. Scrape down and repeat until desired consistency.
    3. Sprinkle with thyme and oregano if desired.
    4. Enjoy dip with crackers!

    Notes

    This dip freezes very well.

      OMG, simply delicious! I did 15g Apple cider vinegar and added fresh lemon juice to taste. It was a super hit and demolished in 5 minutes. Thank you!

      This is the easiest 'show off' dip ever! It's so delicious and guests can't get enough of it! I use s touch less vinegar and use apple cider instead. Have made it tons of times.. Never failed!

      This 'range' of dip developed by Leonie is ALWAYS a hit when I serve it. I generally make a big batch of this when I can get basil on special and then I freeze it in batches so I always have some on hand.

        Lisa I used 20g white vinegar. :) Enjoy! :)
        Or yes I'm sure you could leave it out too if you wish.

        Rose this dip was "winged" by copying a well known commercial dip by using the ingredients on the container. Vinegar was one of them! I guess it is in there to act as a preservative. I'm sure you could leave it out if you don't want to use it.

      This was perfect.I used lemon juice instead of vinegar.Tasted fresh tangy and beautiful.Would not buy from the shop again.

      Made this dip and it was a total hit! I'd like to call it "Pesto's Big Brother" as it's like pesto but EVEN BETTER! so easy to make, and tasted divine. YUM!

        oh I'm sorry to hear that Leanne. Perhaps you could try again and reduce the vinegar amount. Mixing it with cream cheese was a great idea of yours! :)
