Prawns would have to be one of my favourite things to choose from if they are on a menu. This recipe with the combination of toasted coconut and coriander and the hint of the lime flavour within the sauce is just beautiful! This was a real hit with my family. :)

Ingredients
- 1 tablespoon palm sugar
- 1x1cm fresh ginger or 1 teaspoon minced ginger
- ¼ bunch fresh coriander
- 1 lime juice and zest
- 1 chilli deseeded
- 400ml coconut milk
- 15g fish sauce
- 40g soy sauce
- 20 medium raw prawns peeled and tail intact
- 3 tablespoon desiccated coconut
- fresh coriander (additional)
- Rice, to serve
Instructions
- Pre cook rice and keep warm in ThermoServer.
- Place palm sugar in TM bowl and mill 15 sec / speed 9
- Add ginger, coriander, lime zest and chilli and chop 5 sec / speed 7.
- Cook 3 mins / 100°C / speed 1.
- Add coconut milk, fish sauce, soy sauce and juice of half the lime. Cook 5 mins / 100°C / speed 3 / MC off
- Add prawns and cook 4 mins / 100°C / speed soft / Reverse / MC off.
- Add coconut to fry pan and toast until golden brown. Remove from pan and mix with additional chopped coriander.
- Place prawns on hot rice and spoon over the sauce.
- To serve: top with a sprinkle of coconut and coriander mixture.

I have made this recipe so many times it is on speed repeat. Tonight for something different I used chicken thighs cut into chunks and added instead of prawns. Cooked for 8mins along with sugar snap peas. No toasted coconut used. Good alternative if prawns not available.

tips...
1) remember the simmering basket for the top of the lid...(oops!)
2) this served 2 people in our house... We do love our Asian style soups and prawns ;-)
3) DO NOT WALK AWAY FROM THE COCONUT!!!!!!! Luckily, I had more.... Silly Leisa!!

I guess Leisa it would all depend on how juicy and the size of your lime is - also too how keen you are on a lime flavour. So I think it would be a personal taste thing whether to use the whole or just a half. I'm pleased you liked it! :)
