Since having a Thermomix we really enjoy eating fish - the simplicity of cooking it in the varoma is great and it leaves the fish so moist. This recipe can be used with any type of your favourite fish that you enjoy. Enjoy it served with salad or vegetables and steamed potatoes if you desire.

Ingredients
- 1 lemon, zest only
- 3 garlic cloves, peeled
- 1 tablespoon cumin, ground
- 1 teaspoon coriander, ground
- ½ teaspoon cayenne pepper
- Juice of one lemon
- 2 tablespoon olive oil
- 4 portions salmon steaks
- 800g water
- 2 tablespoon chopped flat-leaf parsley
- 2 tablespoon pine nuts, toasted
Instructions
- In TM bowl zest lemon rind 5 sec / speed 8. Set aside.
- Place garlic into TM bowl and chop 3 sec / speed 8.
- Place garlic into a separate small bowl and combine with the cumin, coriander, cayenne pepper, lemon juice and olive oil.
- Lay salmon onto a plate and rub well on both sides with spice mixture. Set aside for 15 mins.
- Wet and squeeze some greaseproof paper and lay flat in the Varoma. Then place the salmon steaks onto the Varoma tray.
- Add salt and pepper to steaks.
- Place assembled Varoma onto TM and cook 15 mins / Varoma / speed 1. NB: the cooking time will vary depending on the thickness of the salmon.
- Serve salmon topped with lemon zest, parsley and toasted pine nuts. Season with pepper.
Optional
- Potatoes cut into pieces, can be steamed in the simmering basket at the same time that the salmon is steaming in the varoma.
