    Thermomix Strawberry Cheesecake

    In Australia we are all currently stocking up on strawberries to support our strawberry growers.  So I thought it was a very appropriate time to give you a recipe using strawberries!  So, presenting the Thermomix strawberry cheesecake, or for you Aussies, an Iced Vovo cheesecake!

    I've made this using my Berry Cherry Jam and also my Strawberry and Cranberry Jam.  It makes a large cheesecake which would be fabulous for entertaining for all occasions.

    If you have trouble finding Iced Vovo Biscuits, I'd suggest you use the recipe for the base of my Passionfruit Cheesecake.

    Strawberry Cheesecake – September 2018

    Thermomix Strawberry Cheesecake

    Ingredients

    • 80g butter. cubed
    • 100g Granita biscuits, halved
    • 210g Arnotts Iced Vovo biscuits, halved
    • 250g strawberries, quartered
    • 1 tablespoon sugar
    • 500g cream cheese, cubed
    • 160g sour cream
    • 110g sugar
    • 2 eggs
    • 150g strawberry jam

    Instructions

    1. Grease a 20cm x 30cm (base measurement) lamington tin and line the base and 2 long sides with baking paper, allowing the sides to overhang.
    2. Place butter into TM bowl and melt 3 mins / 50°C / speed 2.
    3. Add both varieties of biscuits and crush 10 sec / speed 6. Press crumbs into the base of the tin and chill in fridge for 20 mins while preparing the cheesecake filling.
    4. Place 1 tablespoon sugar and strawberries into TM bowl and cook 10 mins / 100°C / speed 2 / MC off, placing simmering basket onto TM lid to prevent spatter. Once the purée has finished, remove ⅓ and set aside in a bowl.
    5. Preheat oven to 150°C.
    6. Add cream cheese, sour cream and sugar and mix 10 sec / speed 4. Scrape down. Add eggs and mix 20 sec / speed 4.
    7. Spread strawberry jam evenly over the top of the chilled base. Then pour the cheese cake filling on top of the jam layer. Drizzle the remaining strawberry purée over the top and using a skewer, drag lines through the purée to create a marbled effect.
    8. Bake for 20 mins or until just set. Turn the oven off but allow the cheesecake to cool down completely in the oven with the door slightly open.
    9. Chill for a couple hours before serving.

    Notes
