    Spiced Dried Apricot Jam - Week 50, 2017

    Week 50!  WHAT!!!  It just doesn't seem right!  For the year we have had I am so shocked that it's almost over!  This thermomix spiced dried apricot jam is perfect to sit down and contemplate what 2018 will bring!

    I have been blown away with the number of renewals!  Thanks for supporting me even with a format change!  I am looking forward to sharing a couple of new little projects I've started and been working on!!

    But back to this recipe - it's so delicious on toast, in little tartlets, in jam drop biscuits or dare I say it even just by the spoon full!

    Oh I forgot to mention - no need to wait for apricots to be in season either!  Make all year round and the spice mix just gives it a little extra Christmas punch! :D

    Spiced Dried Apricot Jam – ThermoFun

    Ingredients

    • 400g dried apricots
    • 400g boiling water from kettle
    • 400g raw sugar
    • 5cm piece of ginger, sliced into 3
    • 2 cinnamon sticks
    • 3 whole star anise
    • 2 long strips orange peel
    • 20g orange juice

    Instructions

    1. Sterilise jars.
    2. Place apricots and boiling water into TM bowl and cook 10 mins / 100°C / speed 1.
    3. Add remaining ingredients and cook 35 mins / 100°C / speed 1 / Reverse / MC off, placing simmering basket onto TM lid to prevent spatter.
    4. Carefully remove the pieces of ginger, cinnamon, star anise and orange peel and discard.
      WARNING – WHEN PUREEING HOT LIQUIDS FOLLOW THE DIRECTIONS IN YOUR THERMOMIX INSTRUCTIONS MANUAL.
    5. Carefully blend 20 sec, gradually increasing from speed 1 to speed 6.
    6. Pour into sterilised jars and store in fridge.

    Notes

    Recipe can be halved: reduce cooking time in step 3 to 25-30 mins.
