Some days I go to the fridge and I stand there for what feels like hours looking for inspiration for a quick lunch and a change from a sandwich. A few weeks ago I really wanted a quiche and I wanted something with a little extra crunch. Don't want for much now do I?!?!? Well this thermomix pancetta cheese mini quiche recipe was the perfect addition to the lunch menu. Bonus was it was the perfect addition to the dinner menu the next night with a side of salad!
These are perfect for finger food if entertaining or a quick after school snack for the kids. Great for picnics too as they are just as delicious cold! :)
Ingredients
- 3 sheets puff pastry
- 100g cheese, cubed
- 100g pancetta, chopped
- 2 spring onions, sliced finely by hand
- 6 eggs
- 100g milk
- 80g thickened cream
- salt and pepper to taste
Variations
- 1 teaspoon Dijon or Wholegrain mustard (optional)
- half cherry tomato on top
- 1 teaspoon ThermoFun Curry Blend
Instructions
- Preheat oven to 200°C.
- Spray muffin tins and cut puff pastry into a 3x3 grid and place one square of pastry into muffin tins. (You can use an 8cm round scone cutter or your MC but I find that the extra corners make it easier to remove them from the tin).
- Place cheese into TM bowl and grate 6 sec / speed 6 and sprinkle evenly into each pastry case. Distribute pancetta and spring onions on top of cheese.
- Place eggs, milk, cream, cheese, salt and pepper into TM bowl and mix 3 sec / speed 4.
- Spoon evenly into pastry cases.
- Cook 20 mins or until golden and centre mixture is set.

WOW! We ended southing for a picnic so I decided to make these - well they were perfect... both hot out of the oven and cool for the picnic. Awesome recipe!
