Simple meals that are packed full of flavour and already portioned. Yep the easiest dinners! :) These thermomix mini greek meatloaves are exactly that with the ThermoFun Greek Seasoning Blend plus the feta and olives in the middle. Deliciousness!
If you are feeling a little adventurous you could make little meatballs stuffed with feta and olives for lunch boxes as well. I actually enjoyed the meatloaf cold the next day with a greek salad. However you choose to eat these mini greek meatloaves you won't be disappointed!

Ingredients
- 2 tablespoon ThermoFun Greek Seasoning Blend
- 2 slices (60g) bread, torn into quarters
- 2 garlic cloves, peeled
- 1 onion, peeled and halved
- 1 small red capsicum, quartered
- 1 large handful fresh parsley
- 500g lamb mince
- 1 egg
- 60g baby spinach
- 160g feta cheese, lightly crumbled
- ½ cup Kalamata olives, pitted and quartered
- 1000g boiling water from kettle
- vegetable of choice, cut into serving size pieces
Instructions
- Make ThermoFun Greek Seasoning and set aside.
- Place bread into TM bowl and chop 4 sec / speed 6. Set aside.
- Place garlic, onion, capsicum and parsley into TM bowl and chop 3 sec / speed 5.
- Add breadcrumbs, mince, egg and Greek seasoning and mix 15 sec / speed 4 / Reverse. Scrape down and repeat.
- Boil kettle.
- Divide mince into 4 balls and flatten into large, 1cm thick circles. Along the middle of each circle, place a line of baby spinach, feta and olives. Carefully pull the sides up and pinch closed, then pinch the ends closed, sealing up the filling within to form into mini meatloaves
- Wrap each meatloaf into a baking paper ‘parcel’ and place them onto both trays of the Varoma.
- Pour 1000g boiling water into TM bowl. Carefully lower simmering basket filled with harder vegetables (eg carrot, potato) into TM bowl. Place assembled Varoma onto TM lid and steam 20 mins / Varoma / speed 2.
- Add softer vegetables (eg beans, snow peas) onto Varoma tray around the meatloaves and continue steaming 10 mins / Varoma / speed 2.
- Serve vegetables with the mini meatloaves.
Notes
If you follow a LCHF diet you can substitute the breadcrumbs with equivalent amount of almond meal.

This is a delicious dish, I also used the almond meal instead of the bread, just for a different flavour. I customised the vegetables for each family member in the middle of each meatloaf. I added some of the spinach leaves with the capsicum, so it mixed in with the meat as I have a reluctant vegetable eater. The other filling I used was mushroom with feta instead of olives. This would make a great dinner party dish as you can make it ahead of time. Thank you for a great recipe.

As I follow Low Carb, Healthy Fat, I replaced the breadcrumbs with the equivalent amount of almond meal. This worked beautifully.
