    Mexican Meatball Soup - Week 32, 2016

    Fill the bowl, lots of left overs (if you can hold everyone off from seconds!) and cooked all in one - Yes I heard you!  This thermomix mexican meatball soup is all of those plus a beautiful hit of spice to help keep you warm on those cold winter nights!  When you use my ThermoFun Taco Seasoning you know you are getting the most delicious mexican hit of flavour!

    Now they say that soups are meant to be great for giving  your digestive system a break and a little spice also helps with weight loss, so I am going to go all out here and say - this is a great weight loss/healthy meal!  :)

    Now go fill the bowl and enjoy this little flavour packed soup for dinner!

    Thermomix Mexican Meatball Soup

    Mexican Meatball Soup – Week 32, ThermoFun

    Thermomix Mexican Meatball Soup

    Ingredients

    Meatballs

    • 2 garlic cloves, peeled
    • 500g beef or chicken mince
    • 3 teaspoon ThermoFun Taco Seasoning
    • 1 egg
    • 60g white rice

    Soup

    • 2 garlic cloves, peeled
    • 1 onion, halved and peeled
    • 10g olive oil
    • 1 carrot, diced
    • 1 stick celery, diced
    • 1 large potato, diced
    • 500g chicken stock
    • 400g boiling water from kettle
    • 400g can diced tomatoes
    • 1 teaspoon ThermoFun Taco Seasoning
    • 1 medium zucchini, diced
    • ½ lemon, juice only
    • handful fresh chopped parsley or coriander
    • salt and pepper, to taste

    Instructions

    Meatballs

    1. Place garlic into TM bowl and chop 3 sec / speed 8. Add remaining meatball ingredients and combine 20 sec / speed 3 / Reverse.
    2. With hands, roll teaspoon amounts of mixture into small bite-size meatballs. Place onto Varoma trays and set aside.
      No need to wash TM bowl.

    Method - Soup

    1. Place garlic, onion and oil into TM bowl and chop 3 sec / speed 5.
    2. Scrape down and sauté 5 mins / Varoma / speed 1.
    3. Add carrot, celery, potatoes, stock, boiling water, tomatoes and taco seasoning.
    4. Place assembled Varoma into position onto TM lid and cook 25 mins / Varoma / speed 1 / Reverse.
    5. Carefully remove Varoma and add zucchini to soup and cook 5 mins / Varoma / speed 1 / Reverse.
    6. Place meatballs into ThermoServer and carefully pour soup over the top.
    7. Stir through lemon juice, parsley/coriander, salt and pepper.

    Notes

    Do not be tempted to add any more vegetables than stated as the TM bowl will be full to capacity.
    Recipe suitable for freezing.

      This recipe was easier than i expected and so delicious. I found the flavour got better the longer i left it in the Thermoserver. I'll let it rest a bit longer next time, i'm looking forward to the flavour tomorrow when i have the leftovers
