HAPPY NEW YEAR!
Today's recipe goes something like this, if I have to face 2017 I am starting it with a bang! This Thermomix pineapple mango daiquiri is so refreshing and perhaps a little addictive! Due to the thirst quenching, refreshing taste of course!
In all seriousness, the recipe was inspired by a cocktail party we attended late last year. The function had some serious delicious cocktails but this one for me anyway was the biggest winner! I think it's because it just works so well with Summer. It has that sweetness, it's cool & refreshing and I guess I just imagined myself on the beach in a big deck chair relaxing. Wow I do some serious day dreaming don't I!
Recipe note: I do find that fresh mango and fresh pineapple do make it a little more crisper in taste.

Ingredients
- 120g white rum
- 60g lime juice
- 200g fresh or frozen pineapple, cubed
- 200g fresh or frozen mango, flesh only
- 200g ice cubes
- pineapple wedges, for garnish
Instructions
- Place all ingredients into TM bowl and blend 1 min / speed 9.
- Pour into two glasses and enjoy!
