Valentine's Day is approaching and I thought that this quick and simple dessert could be shared amongst those you love! These thermomix coconut custard pots are super yummy and you can always add a little chocolate to the top to "dress them up". But if you just feel like something different then this dessert is delicious!
It is a simple dessert that is cooked in just 10 minutes, I kid you not! I don't think it gets much simpler, other than buying a chocolate bar and eating that! But for some reason I don't think you'd find that as an acceptable recipe!
I almost forgot - if you have some sponge or perhaps some chocolate cake pieces they're perfect to pop on top.
Ingredients
- 8 sweet biscuits e.g. Anzac biscuits, scotch finger, shortbread, butternut snap biscuits etc
- 2 x 400ml coconut milk
- 2 whole eggs + 1 egg yolk
- 60g brown sugar
- 1 teaspoon ThermoFun Vanilla Bean Paste
- 50g cornflour
Instructions
- Place biscuits into TM bowl and chop 5 sec / speed 6 (a mixture of chunky and crumb is good). Set aside.
- Place remaining ingredients into TM bowl and cook 8 mins / 90°C / speed 4.
- Layer the crushed biscuits and coconut custard into dessert glasses or ramekins.
