Do I need to describe how amazing these cookies are? Think fudgey, slight crunch, and gooey centres. I know I should just stop talking about them hey as I could go on and on! ;)
Oh and IF you have any left - these freeze really well too. Or maybe I should say - Freeze immediately after cooling!! ;)
These were inhaled at a birthday get together we had with some friends. They love when I come because I usually test a dessert recipe on them. These cookies were inhaled! I mean it they didn't even last 5 minutes, everyone passed the plate around so quickly that everyone looked at me with those doe eyes waiting for me to pull more out! I mean there was only 15 of us and it makes 36 cookies! :)
Ingredients
- 240g butter, softened cubed
- 270g raw sugar
- 2 eggs
- 1 teaspoon vanilla bean paste
- 120g Baileys Irish Cream
- 360g plain flour
- 40g cacao powder
- 1 teaspoon instant coffee powder
- 1¼ teaspoon bi-carb soda
- ¼ teaspoon salt
- 90g milk choc chips
- 180g white choc chips
Instructions
- Place butter, sugar, eggs and vanilla in TM bowl and mix 1 min / speed 5.
- Add Baileys Irish Cream and mix 5 sec / speed 5.
- Add flour, cacao, coffee, bi-carb and salt and mix 10 sec / speed 5. Scrape down and repeat.
- Add all choc chips and mix 10 sec / speed 4 / Reverse.
- Place cookie mixture into a flat container (increasing surface area) and refrigerate for a min 1 hour or freezer for 30 mins (or until firm enough to roll the dough into balls).
- Preheat oven to 175°C. Line 2 trays with baking paper.
- Roll the dough into golf ball sized balls and place on baking trays, leaving enough room between each for spreading.
- Bake in oven 12 mins. Allow cookies to cool slightly on trays before carefully transferring them to a wire rack.
