This is no ordinary thermomix chocolate cookie! It's a VERY addictive cookie, which has a gorgeous soft and chewy texture on the inside!!! It's great for the lunchbox or as an after school treat.
I think they make some amazing creations like ice cream sandwiches or you could drizzle some melted chocolate over them for an extra special treat. I'm really looking forward to trying an ice cream sandwich with these actually.
If you have time double the recipe and freeze some so you have quick snacks for those times you're rushing out or in the door between after school sports/appointments.

Ingredients
- 25g almonds
- 100g Maltesers
- 50g white chocolate chips
- 50g butter, cubed
- 200g dark chocolate melts
- 395g condensed milk
- 2 tablespoon malted milk powder eg: Horlicks
- 200g self raising flour
- pinch of sea salt
Instructions
- Place almonds into TM bowl and mill 10 sec / speed 9. Set aside.
- Place Maltesers and white chocolate into TM bowl and roughly chop
3 sec / speed 5. Set aside. - Place butter and dark chocolate into TM bowl and melt 3 mins / 50°C / speed 2. Scrape down and repeat.
- Add condensed milk, almond meal and Horlicks and mix 10 sec / speed 4.
- Add flour and salt and mix 15 sec / speed 4.
- Transfer cookie mixture to a separate large bowl and refrigerate for 30 mins.
- Pre-heat oven to 170°C. Line a baking tray with baking paper.
- Remove bowl from fridge and gently fold in the Maltesers and white chocolate with aid of spatula.
- Roll into balls and place onto baking tray, flattening them down a little.
- Bake 12 mins or until chewy in the middle and firm on the edges. Let cool on baking tray for 5 mins, then transfer to a wire cooling rack.
Notes
Optional: cut up a few additional Maltesers to poke in the tops before baking.
