    Choc Coconut Muffins - Week 41, 2017

    OMG!  These thermomix choc coconut muffins are ... I have no words just read some of these testimonials from my testers!  :)

    "Best chocolate muffins EVER!  Won't be going back!  Even the birthday boy & his friends said they were great!"

    "Hubby took them to work and watched a grown man involuntarily lick his fingers!"  Another one came back at the end of shift and said "You have anymore of those chocolate muffins?!"  When he replied no - the look he got was like a 2 year old that had his favourite toy taken from him!!

    Same guy took another batch to work this week and some random guy who doesn't usually work in the department said - "have you brought in those chocolate muffins that John is raving about?!"

    So if you are after a sure fire crowd pleaser then these muffins are the ones you need to be making!  Not overly strong in the coconut flavour in the muffin IF you don't want to ice them.

    Choc Coconut Muffins – ThermoFun

    thermomix-Choc-Coconut-Muffins

    Ingredients

    Muffins

    • 75g dark chocolate melts
    • 130g raw sugar
    • 200g plain flour
    • 15g cacao powder
    • ½ teaspoon bi-carb soda
    • ¼ teaspoon salt
    • 2 eggs
    • 250g coconut milk
    • 100g water

    Frosting

    • 200g icing sugar
    • 2 tablespoon cacao powder
    • 40g coconut oil
    • 30g coconut milk (NB: depending on consistency of your coconut oil you may need 40g to get the required spreadable consistency).
    • handful desiccated coconut for sprinkling on top

    Instructions

    1. Preheat oven to 160°C. Line a 12 hole muffin tray with liners.
    2. Place dark chocolate and sugar into TM bowl and chop 6 sec / speed 9.
    3. Add flour, cacao, bicarb, and salt and mix 5 sec / speed 4.
    4. Add eggs, coconut milk and water and mix 5 sec / speed 5. Scrape down and repeat.
    5. Divide the batter into the 12 muffin liners.
    6. Bake for 18-20 mins, until a skewer comes out clean from the middle of a muffin. Allow to cool before frosting.

    Frosting

    1. Place all frosting ingredients into TM bowl and mix 5 sec / speed 5. Scrape down and repeat.
    2. Smooth over a small amount of frosting onto each muffin and sprinkle with coconut.
