    Walnut, Cinnamon, Aniseed Paximadia (Greek Biscuit) - Week 25, 2016

    Boil the kettle!  Brew the coffee!  Whatever you normally have with a delicious biscuit get it made!  This thermomix walnut, cinnamon, aniseed paximadia (greek biscuit) is something that you will want to be having with your daily (or in my case triple) caffeine hit.  :)

    Do you ever look at Italian and Greek biscuits, cakes etc and think to yourself wow so much effort goes into these but then you watch someone from Italy or Greece make them and you just see pure love, devotion and fun/laughter happening.  Whenever I see recipes like this I just think about the times I have watched them make them and then see their families just demolish the food in a matter of minutes.

    So when you're making these imagine you're in Greece cooking with so much love and then make sure you hide some for yourself to enjoy before your family comes whirling in and eating them all on you!  :)

    Thermomix Walnut Cinnamon Aniseed Paximadia

    Thermomix Walnut Cinnamon Aniseed Paximadia

    Ingredients

    • 150g walnuts
    • 130g olive oil
    • 3 eggs
    • 1 teaspoon ThermoFun Vanilla Bean Paste
    • 530g plain flour
    • 180g raw sugar
    • 1½ teaspoon baking powder
    • 1 teaspoon cinnamon, ground
    • 1 teaspoon aniseed, whole
    • ½ teaspoon salt
    • 1 egg yolk
    • 2 tablespoon sesame seeds

    Instructions

    1. Preheat oven to 180°C.
    2. Place walnuts into TM bowl and chop 2 sec / speed 4. Set aside.
    3. Place oil, eggs and vanilla into TM bowl and combine 5 sec / speed 4.
    4. Add flour, sugar, baking powder, cinnamon, aniseed and salt and mix 20 sec / speed 5. (dough will have a sandy texture).
    5. With aid of spatula, loosen dough from bottom of TM bowl and mix again 10 sec / speed 5.
    6. Empty dough onto a large piece of baking paper and divide into 2. Roll each into a rough rectangular shape approx. 6mm thick.
    7. Sprinkle chopped walnuts over the top. Then using baking paper as an aid, roll into a smooth log shape measuring approx. 30cm long x 2cm thickness.

    9. Place logs onto lined baking trays. Brush each log with egg yolk and sprinkle generously with sesame seeds.
    10. Bake 25 mins until lightly golden.
    11. Transfer onto a wire rack and allow to cool for 5 mins.
    12. Turn oven down to 150°C.
    13. On a cutting board, using a serrated knife, carefully slice each log into 2cm slices. Lay each cookie flat onto baking tray and bake a further 10 mins at 150°C.

    Notes

    Add finely chopped dried dates/figs and sprinkle on top with the walnuts.
