A great alternative to the classics. This thermomix basil pesto pizza is an amazingly delicious and simple recipe. Using my Easy No Rise Pizza Dough recipe makes dinner simple and easy! This basil pesto is a slightly different recipe and I have to say it's wonderfully delicious! You can use your classic basil pesto or if you are feeling adventurous try this cashew inspired recipe.
Like with most pizzas - well at least in our house - we have alot of "whatever is in the fridge pizzas" and this basil pesto has been a nice base or as a quick dinner we have just had the basil pesto and cheese. A nice white wine has always accompanied this pizza though! Just saying! :)

Ingredients
Basil Pesto
- 30g fresh basil
- 120g cashews, unsalted
- 1 garlic clove, peeled
- 60g parmesan cheese, cubed
- 40g olive oil
Easy No Rise Pizza Dough
- 450g Baker's flour
- 1 teaspoon salt
- 2 teaspoon sugar
- 2 teaspoon dried yeast
- 50g olive oil
- 250g warm water
Pizza Toppings
- ThermoFun Tomato Paste
- cheese, grated
- mushrooms, sliced
- cherry tomatoes, halved
- bocconcini, sliced
- basil pesto
- garnish, thyme & oregano
Instructions
Basil Pesto
- Preheat oven 200°C.
- Place all ingredients into TM bowl and chop 1 sec / Turbo.
- Scrape down and repeat. Set aside. No need to wash TM bowl.
No Rise Pizza Dough
- Place all ingredients in order into TM bowl and mix 5 sec / speed 6.
- Knead 1 min / Interval (wheat symbol).
- Divide into 2-4 equal parts depending on size you want.
Pizza Topping
- Spread tomato paste on pizza base.
- Sprinkle with cheese.
- Add mushrooms and cherry tomatoes.
- Dollop on ½ teaspoon amounts of pesto around pizza.
- Place bocconcini on pizza.
- Garnish with thyme and oregano.
- Cook assembled pizza in oven for approx. 12 mins.
- If oven is up to temp. and pizza stone is hot, pizza will only need approx. 7 mins.
