    Basil, Pesto and Cashew Dip - Week 6, 2014

    Ok so I really think I must be obsessed with taking photos of the ingredients on the containers of commercial dips in the supermarket and coming home and just ‘winging’ it to see if I can make it for a fraction of the price and having no additives or preservatives in it!

    ThermoFun Basil, Pesto and Cashew Dip – Week 6, 2014

    Ingredients

    • 100g cashews, unsalted
    • 1 small green capsicum, quartered
    • 10g olive oil
    • large handful fresh basil (approx. 10g)
    • 1 garlic clove, peeled
    • 30g mozzarella cheese, cubed
    • 10g balsamic vinegar
    • 1 spring onion, quartered
    • ¼ teaspoon raw sugar
    • ¼ teaspoon ThermoFun Thai Spice Blend
    • ¼ teaspoon thyme
    • 1 chilli, deseeded (optional)

    Instructions

    1. Place all ingredients into TM bowl and chop 1 sec / Turbo. Scrape down and repeat until desired consistency.
    2. Enjoy dip with crackers.
