This thermomix Poppy Seed Lime Cake came all about when travelling in Europe with our friends. They decided that they would attempt to convert a french recipe to english! The result of trying such a thing had us in stitches!!! Nevertheless this cake is the result of said attempt and it is delicious!
I don't think Tony and Julia even had it translated in the end, so who knows if this is the actual recipe or one that they created! But either way it's worth the make! Thanks to the French foodies !!!
I know you will enjoy this cake just as much as I from the responses that my recipe testers have shared!
Here are a couple of recipes to use the lime juice. One or two might work on the Monthly Challenge as well :D
- Chicken & Creamy Coriander Lime Sauce,
- Lime & Ginger Curd,
- Exotic Thai with Cashews Dip,
- Thai Chilli, Coriander and Cashew Dip,
- Lime & Ginger Chicken.

Ingredients
- 200g raw sugar
- 3 eggs
- 40g butter, cubed, softened
- 2 limes, zest only, finely grated
- 100g pure cream
- 15g sunflower oil
- 25g poppy seeds
- 190g plain flour
- 1 teaspoon baking powder
- 2 pinches of salt
Instructions
- Preheat oven to 165°C. Line a round or loaf tin with baking paper.
- Place sugar into TM bowl and mill 3 sec / speed 9.
- Add eggs, butter, lime zest, cream, oil and poppy seeds and mix 10 sec / speed 4. Scrape down.
- Add flour, baking powder and salt and mix 15 sec / speed 4. Scrape down.
- Pour into tin and bake 40 mins or until skewer comes out clean.

Absolutely delicious. The combination of lime and poppy seeds is fantastic. I think I've just put on 5 kilos...The cake lasted about 20 minutes!
Did a second batch. 20 cupcakes - cooked 30 mins at 165*C
Will definitely make again.
