I really love this particular spice blend – its blend of sweet and smoky spices is great in sausage rolls, burgers and rubbed over red meats before cooking. You can use ground spices, or seeds/pods and mill them in the Thermomix.

Ingredients
- 2 tsp cumin, ground
- 2 tsp paprika, smoked
- 1 tsp coriander, ground
- 1 tsp black pepper, ground
- ½ tsp cinnamon, ground
- ½ tsp nutmeg, ground
- ¼ tsp cardamom, ground
- ¼ tsp cloves, ground
Instructions
- Place all ingredients into an airtight container and shake to distribute spices evenly.
- Store away from extremes of heat, light and humidity for up to 1 year.
- Shake well before each use.
Notes
This amount is the correct amount to be used in one batch of sausage rolls.
If you have seeds or pods place in TM bowl and mill 1 min / speed 9.

I thought this would be too spicy for my children, but it was not. I made this twice during the March cook along – once in the sausage rolls and once in the lamb burger. This really is tasty without being overpowering. Thanks for another great recipe.
