    Crustless Bacon & Spinach Quiche - Week 52, 2015

    Thermomix LCHF Bacon & Spinach Quiche

    Don’t you just love it when friends find recipes for you – convert them and then get you to test them!   :)  A beautiful friend whom I haven’t seen in a while sent me this recipe to give a go – verdict – a must for all families – Oh and if you are LCHF it is perfect for you.

    Oh yeah a quiche is a quiche I hear you say - they are all the same - well yes and no - this one is certainly a NO - I can't pin point it but it is certainly the quickest meal to serve up and also the quickest meal to throw in a lunch box!

    Oh and maybe if you have some left over Christmas Ham "laying about" throw that in instead of the bacon .... mmmmm DELICIOUS!

    This was inspired by a recipe on food.com to be made in the Thermomix.

    Week 52 – Crustless Bacon & Spinach Quiche

    Ingredients

    • 100g Swiss cheese, cubed (or any cheese you prefer)
    • 1 large onion, peeled and halved
    • 3 garlic cloves, peeled
    • 6 slices shortcut bacon, quartered
    • 250g frozen spinach, defrosted and squeezed out well
    • 6 eggs
    • 100g thickened cream
    • pepper, to taste

    Instructions

    1. Preheat oven to 180°C. Grease a quiche dish.
    2. Place cheese into TM bowl and grate 8 sec / speed 10. Set aside.
    3. Place onion, garlic and bacon into TM bowl and chop 5 sec / speed 5. Scrape down.
    4. Add spinach and cook 5 mins / Varoma / speed 2 / Reverse / MC off.
    5. Add eggs, cheese, cream, pepper and mix 30 sec / speed 3.
    6. Pour into quiche dish and cook for 25-30 mins
    7. Remove from oven and allow quiche to rest for 5 mins before cutting.

      Leonie and Steve,
      This was so yummy!

      It was full of ingredients yet didn't leave us too full and heavy (It is just after christmas so it was a wonderful light summers meal!)

      I only had 200gms spinach so topped it up with feta... I had a 200gram block so added that what can I say, I really like cheese!!). I also added about 25 grams of cheese and put it on the top!

      We served it on rocket and hubby went back for 2nd's!!
