I love meals that can be whipped up quickly in the Thermomix! I love the flavours from my Taco Seasoning in this dish and as this makes a huge quantity. It's great for feeding a crowd!

Ingredients
- 2 batches ThermoFun Taco Seasoning - mix, divided (2 tablespoon in total if you already have some made up)
- 600g chicken thighs, cut into large strips
- 2 garlic cloves, peeled
- 1 onion, peeled and halved
- 1 red capsicum, quartered
- 20g olive oil
- 400g can sweet corn kernels, drained
- 400g can red kidney beans, drained
- 350g basmati rice
- 20g TM vegetable stock concentrate
- 60g ThermoFun Tomato Paste
- 1000g boiling water from kettle
- 1 bunch coriander, leaves and stems
- 1 lime, zest and juice, divided
Garnish
- 1 avocado, diced
- sour cream
Instructions
- Place all taco seasoning ingredients into a dish and mix well. Set aside.
- Coat chicken strips with half (5 tsp) taco seasoning.
- Wet and squeeze a sheet of baking paper. Line the upper layer of the varoma tray. Twist the corners of the paper to make a shallow ‘bowl’ shape and place chicken onto the baking paper ‘bowl’. Be sure to keep the side vents exposed so steam can circulate freely.
- Place garlic, onion, capsicum, oil and remaining taco seasoning into TM bowl and chop 3 sec / speed 5.
- Scrape down and sauté 5 mins / Varoma / speed 1 / Reverse / MC off.
- Add corn and kidney beans and cook 2 mins / Varoma / speed 1 / Reverse. Set aside in pre-warmed ThermoServer. No need to wash TM bowl.
- Place rice into simmering basket and rinse under tap until water runs clear.
- Place stock, tomato paste and boiling water into TM bowl. Insert simmering basket into TM bowl.
- Place assembled Varoma onto TM lid and cook 18 mins / Varoma / speed 1.
- While rice and chicken are cooking, roughly chop the coriander, finely zest the lime then cut it in half.
- Squeeze one half of lime over corn and bean mix in ThermoServer.
- Add cooked rice, coriander (set aside some for garnish) and lime zest into ThermoServer and combine well.
- Squeeze remaining half of lime over chicken.
- To serve, divide rice between plates. Place chicken onto rice and garnish with diced avocado, coriander and a dollop of sour cream.
Notes
Additional Serving Suggestion:
use it inside a burrito style wrap with some crunchy lettuce.

This is just so tasty and an awesome, easy, all in one meal that makes a large quantity. We enjoyed it the first night as is and then used the left overs the next night in a burrito wrap with salad as you suggested. Also made your salsa to go with it. Thumbs up all round.
