    Spinach, Mushroom and Ricotta Cannelloni Recipe - Week 21, 2015

    This is another great dish to use my Passata with.  A very tasty vegetarian dish to serve with vegetables or salad of your choice.  My daughter hates mushrooms but she really enjoys this for dinner.

    Week 21 – Spinach, Mushroom and Ricotta Cannelloni Recipe

    Week 21 – Spinach, Mushroom and Ricotta Cannelloni Recipe

    Ingredients

    • 60g parmesan cheese, cubed
    • 2 garlic cloves, peeled
    • 1 onion, peeled and halved
    • 20g olive oil
    • 250g mushrooms
    • 100g baby spinach
    • 300g ricotta cheese
    • 1 teaspoon dried mixed herbs
    • salt and pepper, to taste
    • 200g cannelloni tubes (20 tubes)
    • 1000g boiling water from kettle
    • 600g ThermoFun Passata
    • extra parmesan cheese, to serve

    Instructions

    1. Place parmesan cheese into TM bowl and grate 10 sec / speed 9. Set aside.
    2. Make ThermoFun Passata and set aside.
    3. Place garlic, onion and oil into TM bowl and chop 3 sec / speed 5.
    4. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
    5. Add mushrooms and spinach and chop 5 sec / speed 5. Scrape down and repeat.
    6. Cook 2 mins / Varoma / Reverse / speed 1 / MC off.
    7. Add parmesan, ricotta, mixed herbs, salt and generous grinds of pepper and mix 12 sec / speed 2 / Reverse.
    8. Boil a kettle of water at this stage and line the 2 trays of the Varoma with baking paper with the corners twirled around to form a makeshift 'tray'. Place baking paper on egg rings (or something similar) which enables steam to come through the holes in the Varoma.
    9. Fill a piping bag (or zip lock bag with corner snipped off) and fill the tubes placing them on the two levels of the Varoma.
      No need to wash TM bowl.
    10. Pour 1000g boiling water into TM bowl and place assembled Varoma onto TM lid and cook 15 mins / Varoma / speed 2.
    11. Ladle majority of Passata over the top of the cannelloni (this adds moisture to the pasta to prevent it from drying out) replace lid and steam a further 5 mins / Varoma / speed 2.
    12. Serve cannelloni on a plate with a little more sauce and grated parmesan cheese.

      We still prefer the cannelloni baked in the oven, so skip step 8 and on.
