The other day I received a very pleasant surprise in the mail from one of my lovely ThermoFun Club Members! Raelene kindly offered to test one of my recipes before I published it. The recipe was White Chocolate Cranberry Pecan Cookies - I explained to Raelene that I made these way back in June so I had forgotten what they tasted like! Raelene surprised me and put two in the Australia Post mail for me!! However silly me left them on the coffee table and my naughty Lily devoured them as soon as I left the room!! oops!
So I still don't know what they tasted like - but Lily sure loved them thanks Raelene! :)
And now my dog has cookies named after her!! She really is a 'princess'!!

Ingredients
- 60g pecans
- 120g brown sugar
- 85g raw sugar
- 220g butter, cubed, softened
- 2 eggs
- 2 teaspoon ThermoFun Vanilla Bean Paste
- 330g plain flour
- 1 teaspoon baking powder
- 1 teaspoon bi-carb soda
- ½ teaspoon salt
- 100g white chocolate chips
- 85g dried cranberries
Instructions
- Preheat oven to 180°C. Line 2 trays with baking paper.
- Place pecans into TM bowl and lightly chop 1 sec / speed 5. Set aside.
- Place brown sugar and raw sugar into TM bowl and mill 10 sec / speed 9.
- Add butter and mix 5 sec / speed 4. Scrape down and repeat.
- Add eggs and vanilla and mix 8 sec / speed 4.
- Add flour, baking powder, bi-carb, and salt and mix 5 sec / speed 7. Scrape down and repeat.
- Add chocolate, cranberries and pecans and mix 20 sec / speed 4 / Reverse.
- Roll teaspoons of mixture into a ball, place onto baking trays and flatten leaving space between to allow for spreading.
- Bake for 8-10 mins.
- Let cool on baking tray and then transfer to cooling rack.
Notes
Using a cookie/icecream scoop is another way of forming the mixture quickly into balls.
