    ThermoFun - Thai Chilli, Lemongrass, Coriander and Cashew Dip Recipe

    This is a very similar dip to one I’ve already ‘winged’ before by copying the ingredients off a commercial dip container!  However this has more sweet chilli sauce and also has lemongrass in it, which I really enjoy in Thai food.  This thermomix Thai Chilli Lemongrass Coriander and Cashew Dip is delicious made with my Thai Spice Blend.

    This dip has so much flavour you will be hovering over the bowl!  I've made this quite a few times and it really is the first to be cleaned out and I've even heard someone ask the host - oh have you got the container for that dip I want to get some for home!!

    It still never ceases to amaze me how we can just throw everything in the Thermomix and in literally 2 seconds we have a sensational dip! ☺

    Thermomix-Thai-Sweet-Chilli-Dip

    Ingredients

    • 1 red capsicum (120g approx.), quartered
    • 120g cashews, unsalted
    • 20g olive oil
    • 5g fresh coriander (a generous handful)
    • 25g ThermoFun Sweet Chilli Sauce
    • 1 garlic clove, peeled
    • 1 red chilli, deseeded
    • lemongrass (approx. 10cm), sliced into rings
    • 5g lime juice
    • 5g lemon juice
    • 1 teaspoon ThermoFun Thai Spice Blend

    Instructions

    1. Place all ingredients into TM bowl and chop 1 sec / Turbo.
    2. Scrape down and repeat to desired consistency.

      Hi there! I love Thai flavours, and am quite keen on replicating this! I did notice chickpeas on the ingredients list, though (of the store bought product)... do you think they would add or detract from the flavours?

        Naz, I use unsalted roasted cashews. :) But either would be fine.

      Thankyou - Loved it.. So YUMMY and easy.

      I have made this with macadamias also (instead of cashews) because my husband is allergic to cashews but not other nuts!!
