    Baileys Irish Cream & Pistachio Fudge Recipe

    I love chocolate, I love Baileys and I love condensed milk (by the spoonful!) but then throw pistachios in too – then I’m as happy as a pig in mud!  :)

    Recipe converted to be made in the Thermomix from Eatgood4life website.

    ThermoFun - Baileys Irish Cream & Pistachio Fudge

    Ingredients

    • 150g shelled pistachios
    • 1000g white chocolate melts (yes 1kg!)
    • 400g condensed milk
    • 130g Baileys Irish Cream

    Instructions

    1. Line a slice tin with baking paper.
    2. Place pistachios into TM bowl and chop 3 sec / speed 5 (you still want large bits). Set aside.
    3. Place 200g chocolate into TM bowl and grate 10 sec / speed 9. Set aside and repeat in 200g lots setting aside..
    4. Add chocolate, condensed milk and Baileys and mix 10 sec / speed 3. Scrape down and cook 10 mins / Varoma / speed 2.
    5. Add pistachios and mix 10 sec / speed 3 / Reverse.
    6. With aid of spatula ensure pistachios are mixed through.
    7. Pour into prepared tin and allow it to set in the fridge.
    8. Cut into small squares - it's very rich!

    Notes

    Please do NOT be tempted to halve this recipe as it does not work!!! I have no idea why though!!!

      Hi there,
      I'm making this today for Christmas pressies. Does it need to be stored in the fridge or can I store it at room temperature ( like fudge you see in shops) -0and if so, for how long?

        Hi Irene, I think it really depends on the climate that you live in. I tend to always keeps my fudge in the fridge in the summer months. It will also last in the fridge for a good couple of months.

      This looks and sounds totally naughty and delectably delicious! Please, does anyone know if it can be frozen and still be great after?.....I'd like to make it ahead if i can freeze it preferably. TIA

      Rich, decadent and totally delicious :-)
      I added 100g cranberries this time to make it for Christmas, but it still tastes great when I've made it without them :-)
      This is one of my favourite fudges :-)

        hmmmm Melissa I'm not sure - I really do think the pistachios make it. The recipe would work I'm sure but just may not taste as good. :(
