Did you try the Beef & Broccoli with Black Bean Sauce? Well then you will want to add this thermomix steamed pork & black bean sauce to your meal plan this week!
Tania got the inspiration for this dish after testing the beef and broccoli and having some left over salted black beans. She said she was thinking of her favourites on the Yum Cha / Dim Sum cart. "I always get a plate of the steamed black bean pork spare ribs." Wow! I thought how sticky and yummy would that be! :)
This recipe is best with a pork cut with a little fat running through it. Strips of pork spare ribs can be found in the supermarket, look for a meaty packet, not overly fatty.

Ingredients
Marinade
- 3 garlic cloves, peeled
- 2cm ginger
- 2 tablespoon dried salted black beans (small bag purchased at Asian grocery)
- 50g soy sauce
- 1 tablespoon cornflour
- 10g olive oil
- 20g Chinese cooking wine
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- ¼ teaspoon black pepper grinds
Meat
- 800g - 1kg pork spare ribs (no bones) cut into 2-3cm pieces
- 900g boiling water from kettle
Rice
- 1000g boiling water from kettle
- 350g basmati rice
Vegetables
- 300g green beans, top and tailed, halved
Instructions
Marinade
- Place garlic and ginger into TM bowl and chop 3 sec / speed 5.
- Add remaining marinade ingredients and mix 5 sec / speed 4 / Reverse.
- In a large bowl, combine the pork pieces with the marinade, set aside and allow to rest for 20 mins.
No need to wash TM bowl. - While the pork is marinating, cook the rice.
Rice
- Pour 1000g boiling water into TM bowl. Weigh rice in simmering basket and rinse under cold tap until water runs clear. Carefully insert basket into TM bowl and cook 17 mins / 100°C / speed 4.
- Keep the rice warm in a pre-warmed ThermoServer. Retain the cooking water in the bowl.
Meat and vegetables
- Top up TM bowl with another 900g of boiling water and place the TM lid on.
- Wet and squeeze a sheet of baking paper. Line the upper layer of the Varoma tray. Twist the corners of the paper to make a shallow ‘bowl’ shape and pour the pork and marinade onto the baking paper ‘bowl’. Be sure to keep the side vents exposed so steam can circulate freely. Place the assembled Varoma on top of TM lid and cook 15 mins / Varoma / speed 2.
- Carefully lift the upper Varoma tray with the pork and add the green beans to the bottom dish of the Varoma. Continue steaming the pork and green beans 7 mins / Varoma / speed 2.
- Serve pork and sauce over rice and green beans.
Notes
* The salted black beans can be found in Asian shops. They usually come in a 375g packet for approx. $2.50. Unfortunately they are not in a general supermarket.
