    Spinach & Goat Cheese Quiche (Grain Free Crust) - Week 18, 2016

    All those on the LCHF WOE (see I'm getting good with knowing these acronyms now :D) you will certainly enjoy this thermomix Spinach & Goat Cheese Quiche with a grain free crust!  The crust is so versatile that you can make savoury or sweet items with it.  It's almost like a biscuit with a lovely flavour from the sesame seeds.  Now anybody would think I was just giving you a pie crust recipe!  The filling, the spinach and goat cheese.  Oh my .... I am not sure I really have words!  :)

    Seriously though - try the crust with your favourite quiche or sweet filling!  I don't think it would be wise for me to pop some links for sweet fillings at this stage :D but you all know how to search the website!

    If you're not a LCHF WOE'er (is that done right?!) lol!  ;)   this pastry is delicious for everyone!

    If you're not a goat cheese person or it's hard to find, then sub out with some feta cheese.

    Spinach & Goat Cheese Quiche (Grain Free Crust) – Week 18

    Thermomix Spinach Goat Cheese Quiche Grain Free Base

    Ingredients

    Base

    • 300g almond flour
    • 50g sesame seeds
    • 1 tablespoon psyllium husk
    • ½ teaspoon salt
    • 40g butter, cubed softened
    • 1 egg

    Filling

    • 100g baby spinach
    • 100g cheddar cheese, cubed
    • 1 garlic clove, peeled
    • 5 eggs
    • 300ml cream
    • 1 pinch nutmeg, ground
    • salt and pepper to taste
    • 100g goats cheese, finely sliced

    Instructions

    1. Preheat oven 180°C. Line a 23cm spring form tin.
    2. Place cheddar cheese in TM bowl and grate 10 sec / speed 9. Set aside.
    3. Place almond flour and sesame seeds in TM bowl and mix 20 sec / speed 5.
    4. Add psyllium husk, salt, butter and egg and knead (wheat symbol) 1 min / speed 5.
    5. With aid of MC, press dough evenly in tin going halfway up the sides.
    6. Pierce base of dough with a fork and pre-bake in oven 12 mins.
    7. Scatter spinach in base and sprinkle grated cheddar cheese on top.
      No need to wash TM bowl.
    8. Place garlic in TM bowl and chop 3 sec / speed 8.
    9. Add eggs, cream, nutmeg, salt and pepper and mix 10 sec / speed 3.
    10. Pour egg mixture into base and gently move spinach with a fork to combine.
    11. Arrange goats cheese on top of quiche.
    12. Bake 30 mins or until set and golden.
    13. Serve with a leafy green salad.

      I made this dish & I think I left the base to thick it was a bit to nutty. The filling was lovely I used feta as that's what I had. I night try without the base as someone here said they did.

      hi, I made this on the weekend and it was lovely, thank you. But I don't think my base was cooked enough when I put the wet ingredients in - it flowed out from under the spring form pan :-O and I had to increase my oven temperature to 195 degrees celsius and cook for another 30 minutes on top of the original 30-35 to get the mixture to set. Should I have been using the fan-forced setting rather than convection?

        oh no Im so sorry Amanda. Sadly I've had that experience too with a spring form tin (different recipe) and it made a huge mess of my oven. :( Ever since then I always place a baking tray under the tin just in case! Apologies for not indicating fan forced oven but yes all my recipes are based on fan forced oven temp.
