I realise this roasted brussel sprouts & sweet potato with miso sesame glaze recipe does not exactly headline the use of your Thermomix, but it does give an example of how it can be used to complement other forms of cooking. It emulsifies dressings, marinades and glazes so easily and as all measurements are done in the same bowl, dishes are left to a bare minimum. No one can argue that point. :)
Now, whether you sit on the love 'em or hate 'em side of the fence where Brussel sprouts are concerned is a different matter! Introducing sweet, salty and sour flavours to this glaze gives the sprouts a deliciousness that is quite unexpected, even to the most serious of 'haters'. Go on... give them a try! While they are roasting in the oven you could grill a juicy piece of steak or perhaps even steam some chicken or fish in the Varoma to accompany.
If you're thinking of steaming some chicken in the Varoma to have with this meal, I wouldn't clean the bowl, in fact I would use your chicken to "clean" the bowl before placing in the Varoma for steaming. This gives the chicken a little glaze and then having the steaming water infuse some more flavour on the chicken. Another great accompaniment to this meal would be some shredded chicken, again mop up the extra glaze before steaming. Delicious one bowl lunch for the next day as well!
Ingredients
- 1 tablespoon sesame seeds
- 400g Brussel sprouts, trimmed and halved
- 400g sweet potato, peeled, 2cm cubed
- 50g olive oil
- 60g miso paste
- 30g rice wine vinegar
- 30g honey
- ½ teaspoon black cracked pepper
- 1 teaspoon sesame oil
Instructions
- Preheat oven to 190°C. While oven is heating, place sesame seeds on a baking tray and roast until lightly golden in colour. Set aside.
- Place prepared sprouts and sweet potato into a lined roasting tray.
- Add oil, miso paste, rice wine vinegar, honey and pepper into TM bowl and mix
10 sec / speed 4. - Pour glaze over the vegetables and toss gently until well coated.
- Place into oven and roast 30 mins. Toss vegetables every 10 mins while roasting as exposed edges will darken. Continue roasting in 10 min increments if required, until sweet potato is soft.
- Once roasted, transfer vegetables into a serving dish and drizzle with sesame oil.
- Sprinkle with toasted sesame seeds.
