Okay so this recipe has been literally 2 years in the making, but from all the taste testers we have a winner! This thermomix ranch chicken enchiladas is a delicious dinner! Don't be frightened by the ingredients list, once you have it laid out it's such a simple dish & you can be making it while the chicken is cooking!
With all the testing that has been done on this recipe you would think that I would end up resenting cooking this, but the family have enjoyed it every time! Albeit we are a crazy family :D !!!
This is another great left overs recipe (if you're lucky to have any!) and if it freezes well.
The ranch dressing is also a great addition to your salad dressing list - it's a beautiful flavour combo!
Another great chicken "coating", mix the ranch blend and the taco blend, coat chicken and cook - DELICIOUS! :)
Ingredients
Enchiladas
- 250g cheddar cheese
- 500g (1 batch) ThermoFun Salsa
- 500g chicken mince
- 600g boiling water from kettle
- 20g TM vegetable stock concentrate
- 1 batch Ranch Salad Dressing
- 8 -16 (depending on size) tortillas
Ranch Blend
- 1 tablespoon parsley, dried
- ¼ teaspoon basil, dried
- ¼ teaspoon dill, dried
- ¼ teaspoon garlic, powder
- ¼ teaspoon onion, powder
- ¼ teaspoon pepper
Ranch Salad Dressing
- 2¼ tablespoon (1 batch) ThermoFun Ranch Blend
- 5 teaspoon (1 batch) ThermoFun Taco seasoning
- 250g sour cream OR 250g Greek yoghurt
Instructions
- Grease 2 baking dishes.
- Place cheese into TM bowl and grate 5 sec / speed 10. Set aside.
- Fill kettle and boil.
- Prepare ThermoFun Salsa, place in small bowl in fridge to let flavours develop.
- Mince Chicken / Place 500g of mince into simmering basket.
No need to wash TM bowl. - Pour boiling water and stock into TM bowl. Carefully lower simmering basket into TM bowl and cook 10 mins / 100°C / speed 1.
- Break up mince with aid of spatula and cook a further 5 mins / 100°C / speed 1.
- While chicken is cooking: Prepare ThermoFun Ranch Blend and set aside.
- Prepare ThermoFun Taco Seasoning and set aside.
- Grease 2 rectangle baking dishes.
- Once chicken has finished cooking, set chicken aside. NB: freeze/fridge broth.
- Preheat oven to 180°C.
Ranch Salad Dressing
- Drain excess liquid off salsa.
- Place salsa, 250g sour cream or Greek yoghurt, 1 batch ranch blend and taco seasoning into TM bowl and mix 8 sec / speed 4.
Constructing Enchiladas
- Spread 4 tablespoon of Ranch Salad Dressing onto the bottom of each baking dish. Leave aside approx. ¼ of the Ranch Salad Dressing for top.
- Take tortilla, spread Ranch Salad Dressing, sprinkle chicken & cheese, roll up, place in dish. Repeat until dish is filled. Top with remaining dressing & cheese.
- Bake for 15 mins.
