Now some of you may be thinking "Oh NO Leonie has lost the plot, she has taken to eating healthy! Has she given up the chocolate and baileys?" The answer is no no no, but every now and again I like to try new things, even if I am led kicking and screaming! These thermomix grain free bread rolls are worth kicking and screaming over though. :)
For those following a LCHF lifestyle these may suit you. I am not sure on the carb count so these should probably be a special occasion only bun.

Recipe was adapted for Thermomix from Low Carb Reviews - Swedish Breakfast Buns
Ingredients
- 40g olive oil
- 2 eggs
- 250g sour cream
- 180g almond flour (ground blanched almonds)
- 20g whole flax seeds
- 20g sunflower seeds
- 15g psyllium husk
- 2 teaspoon baking powder
- 1 teaspoon salt
Instructions
- Preheat oven to 200°C and line 2 baking trays.
- Place oil, eggs and sour cream in TM bowl and mix 5 sec / speed 4.
- Add remaining ingredients and combine 10 sec / speed 3 / Reverse.
- Allow dough to rest in the bowl for 15 mins. It's a wet, sticky dough but after resting for 15 mins it should be easier to handle. Divide into 8 round circles on lined baking trays.
- Bake for 20-25 mins.

My household has been low-carb for the last 6-8 months and we were missing the occasional fresh bread with lashings of butter. Another Thermofunkie recommended I try these Swedish Breakfast Buns and ...O.M.Gosh! these are just perfect ..thank you, thank you, thank you. So simple to make and so tasty. We've had them with butter, with vegemite and toasted ham and cheese, and the leftovers will accompany a homemade chicken soup tonight :-) Wow, please add more LCHF recipes to your repertoire Leonie, they are fabulous.

My daughter Leanne Knowles signed me in, I did not realise I had not joined up.
I have had a Thermomix for 4 years, recently upgraded to a TM5.
I find Thermomix meals are easy, quick, and healthy. I am a retired Senior Citizen,
this cuts down on my food bill. I prepare meals keep 2 out and freeze 2 meals.
I have stopped eating bread, potatoes, pasta and rice. Always looking for alternatives.
Quirky cooking I follow and have saved a few of her recipes. This grain free bread rolls looks good.

These are great! You should try them. Handy to have a few in the freezer to pull out when needed too. They toast up really well.
